has-theme-palette-2-color has-text-color\">Schritt 1<\/h5>\n\n\n\n<p>Den Nudelteig aus Hartweizengrie\u00df zubereiten. Das Hartweizenmehl auf eine Arbeitsfl\u00e4che kippen und darin eine kleine Mulde formen. Das warme Wasser in die Mulde gie\u00dfen und mit einer Gabel Mehl und Wasser in der Mitte vermischen. Nach und nach mehr Mehl von den R\u00e4ndern hinzuf\u00fcgen, bis eine dickfl\u00fcssige Masse entsteht. Dann mit einer Teigkarte das restliche Mehl in die Masse einarbeiten und alles zu einem groben Teig vermengen. Den Teig mindestens 10 Minuten kneten. In Frischhaltefolie wickeln und mindestens 30 Minuten bei Zimmertemperatur ruhen lassen. Das Teigst\u00fcck auf einem Nudelbrett mit beiden H\u00e4nden zu einem langen Strang ausrollen. Den Teig daf\u00fcr von der Mitte nach au\u00dfen hin rollen, bis er in etwa gleich breit wie der Zeigefinger ist. Man kann die Pasta ein paar Stunden bei Zimmertemperatur stehen lassen, bevor man sie kocht.
