Fr\u00fch mit Mehl und Wasser f\u00fcttern und an einem warmen Ort (ca. 28\u00b0 C) f\u00fcr ca. 4 Stunden gehen lassen. Der Sauerteig ist einsatzbereit, wenn sich sein Volumen verdoppelt hat, er viele kleine Luftbl\u00e4schen enth\u00e4lt und die Oberfl\u00e4che noch leicht gew\u00f6lbt ist. Sobald der Sauerteig reif ist, die ben\u00f6tigte Menge f\u00fcr das Rezept entnehmen und den Rest bis zur n\u00e4chsten Verwendung im K\u00fchlschrank lagern.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>W\u00e4hrend Sauerteig rastet, kann man mit der Autolyse starten: In einer R\u00fchrsch\u00fcssel Vollkornmehl und warmes Wasser mischen und darauf achten, dass keine trockenen Stellen mit Mehl \u00fcbrig bleiben. Mit einem Geschirrtuch abdecken und ruhen lassen, bis der Sauerteig einsatzbereit ist. Durch die Autolyse kann das Mehl das Wasser vollst\u00e4ndig aufnehmen und der Teig wird weicher und elastischer, ohne dass man ihn nachher viel kneten muss.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Den Hauptteig zubereiten: Den aktiven Sauerteig zum Autolyse-Teig hinzuf\u00fcgen und kurz durchkneten. Das Salz hinzuf\u00fcgen und mit den Fingerspitzen gleichm\u00e4\u00dfig in den Teig einarbeiten. Anschlie\u00dfend den Teig <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#slap-and-fold\" title=\"\">ein paar Minuten lang dehnen und falten,<\/a> um das Glutenger\u00fcst zu st\u00e4rken. Das dauert in etwa 2-5 Minuten. Durch die \"Slap &amp; Fold\" Methode wird der Teig glatter und elastischer.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>Den Teig in eine leicht ge\u00f6lte Sch\u00fcssel geben, mit einem feuchte Tuch abdecken und an einem warmen Ort (ca. 28 \u00b0C) gehen lassen. W\u00e4hrend der Teig geht, wird er in 45 - 60 Minuten Intervallen noch weiter <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#coil-fold\" title=\"\">gedehnt und gefaltet.<\/a> Nach ca. 3 - 3.5 Stunden sollte der Teig sein Volumen deutlich vergr\u00f6\u00dfert (aber nicht zwingend verdoppelt) haben. Es sollten viele kleine Luftbl\u00e4schen im Teig und an der Oberfl\u00e4che zu sehen sein. Wenn der Teig noch sehr kompakt und nicht gelockert aussieht, muss er noch l\u00e4nger gehen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 5<\/h5>\n\n\n\n<p>Das G\u00e4rk\u00f6rbchen mit Mehl best\u00e4uben und den Teig zu einem&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/how-to-shape-sourdough\/#pre-shape\">runden Teigling formen<\/a>Die Kanten \u00fcberlappend bis zur Mitte falten und so lange ringsum wiederholen, bis eine runde Form entsteht. Mit dem Schluss nach unten ca. 20 Minuten auf der Arbeitsfl\u00e4che ruhen lassen und anschlie\u00dfend zu einem&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/how-to-shape-sourdough\/#boule\">runden Laib formen.<\/a>Den Teig mit dem Schluss nach oben ins G\u00e4rk\u00f6rbchen legen, mit einem Geschirrtuch bedecken und \u00fcber Nacht in den K\u00fchlschrank stellen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 6<\/h5>\n\n\n\n<p>Am n\u00e4chsten Morgen den Ofen mit dem Gusseisen-Br\u00e4ter auf 230\u00b0 C vorheizen. Den Teig aus dem G\u00e4rk\u00f6rbchen auf ein St\u00fcck Backpapier st\u00fcrzen, mit dem B\u00e4ckermesser kreuzweise einscheiden und f\u00fcr 30 Minuten im Gusseisen-Br\u00e4ter backen. Danach das Brot vorsichtig aus dem Br\u00e4ter nehmen und ca. 10 Minuten direkt auf dem Gitterrost fertig backen, bis das Brot eine dunkle Kruste hat. Das Brot vor dem Anschneiden mindestens eine Stunde ausk\u00fchlen lassen. Wenn man das Brot anschneidet, solange es noch hei\u00df ist, riskiert man eine gummiartige und klebrige Krume.
