Mit dieser Schritt-f\u00fcr-Schritt Anleitung kannst du deinen eigenen Sauerteig ganz einfach selbst herstellen und mit minimalem Aufwand pflegen. Ein Sauerteigansatz ist ein nat\u00fcrliches Triebmittel, um Teige aufgehen zu lassen und zu lockern, ohne dass man daf\u00fcr handels\u00fcbliche Hefe verwenden muss. Einen Sauerteigansatz (auch Anstellgut genannt) neu herzustellen ist einfach, erfordert aber etwas Geduld: Alles was man daf\u00fcr ben\u00f6tigt, ist Mehl, Wasser und optional ein wenig Honig. Die Mehl-Wasser Mischung f\u00e4ngt in einer warmen Umgebungstemperatur mit der Zeit an zu fermentieren. Dadurch entstehen Kolonien von nat\u00fcrlichen Hefen und Bakterienst\u00e4mmen, die ben\u00f6tigt werden, um Teige zu lockern. Es dauert in etwa 7 Tage, um einen Sauerteigansatz neu herzustellen. Durchhalten, es lohnt sich! Wenn man es geschafft hat, einen triebstarken Sauerteig zu z\u00fcchten, muss man ihn weiterhin pflegen und regelm\u00e4\u00dfig \"f\u00fcttern\". Keine Sorge, der Aufwand ist gering und nicht zeitaufwendig. Ausschlie\u00dflich mit Sauerteig gelockertes Brot wird als \u201enat\u00fcrlich ges\u00e4uert\u201c bezeichnet. Abgesehen von seiner Triebkraft ist Sauerteig auch f\u00fcr besseren Geschmack, leichtere Verdaulichkeit und l\u00e4ngere Haltbarkeit bekannt. Sauerteig ist nicht w\u00f6rtlich \u201esaurer\u201c Teig. Je nachdem wie ein Sauerteigansatz kultiviert und gepflegt wird, kann ein mildes oder kr\u00e4ftigeres Geschmacksprofil erzielt werden. Ein normaler Sauerteigansatz l\u00e4sst sich auch leicht in ein s\u00fc\u00dfes Anstellgut umwandeln und eignet sich hervorragend als Triebmittel f\u00fcr s\u00fc\u00dfe Backwaren.&nbsp;<\/p>\n\n\n\n<p>Um diese nat\u00fcrlichen Hefen und n\u00fctzlichen Bakterienst\u00e4mme zu kultivieren, werden Mehl und Wasser gemischt und an einem warmen Ort mindestens 7 Tage lang stehen gelassen und nat\u00fcrlich fermentiert. Jeden Tag wird ein Teil dieser Mischung entsorgt und der Rest wird mit frischem Mehl und Wasser aufgef\u00fcllt. Im Laufe der Zeit entwickelt der Sauerteigansatz eine stabile Kultur von Hefen und Bakterien, die f\u00fcr das Aufgehen des Teiges erforderlich sind. Diese Mikroorganismen ern\u00e4hren sich vom Zucker im Mehl und erzeugen Kohlendioxidbl\u00e4schen, die daf\u00fcr sorgen, dass das Anstellst sein Volumen vergr\u00f6\u00dfert und in weiterer Folge den Teig aufgehen lassen. Sobald die Mikroorganismen alle im Glas verf\u00fcgbaren \u201eN\u00e4hrstoffe\u201c konsumiert haben, verringert sich das Volumen wider, die Bl\u00e4schen verschwinden und das Anstellgut wird wieder hungrig. Dann ist es wieder an der Zeit, den Sauerteig zu f\u00fcttern und der Zyklus wiederholt sich.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Was ist der Unterschied zwischen einem festen und einem fl\u00fcssigen Anstellgut?<\/h2>\n\n\n\n<p>Der Hauptunterschied zwischen einem festen und einem fl\u00fcssigen Anstellgut ist die Teigausbeute (das Verh\u00e4ltnis zwischen Mehl und Wasser im Teig). Die meisten \u201efl\u00fcssigen\u201c Sauerteigans\u00e4tze werden bei 100 % Hydration gef\u00fchrt. Das bedeutet, dass sie mit Wasser und Mehl zu gleichen Teilen gef\u00fcttert werden. Ein fester Sauerteigansatz hat einen niedrigeren Fl\u00fcssigkeitsgehalt (normalerweise zwischen 50 % und 65 %) und enth\u00e4lt doppelt so viel Mehl wie Wasser. Ein Sauerteig mit 100 % Hydration hat eine Konsistenz \u00e4hnlich wie Backteig, w\u00e4hrend fester Sauerteig von der Konsistenz her \u00e4hnlich wie Brotteig ist. Keine der beiden Arten ist besser oder schlechter. Beide eignen sich gleicherma\u00dfen zum Lockern von Teigen, haben aber unterschiedliche Eigenschaften. Es kommt vor allem auf die pers\u00f6nliche Pr\u00e4ferenz an, mit welchem Sauerteigansatz man vorwiegend backen m\u00f6chte. Ein fl\u00fcssiger Sauerteig kann au\u00dferdem leicht in einen festen Sauerteig umgewandelt werden und umgekehrt. Daher muss es h\u00e4ufiger aufgefrischt werden. Im Umkehrschluss ben\u00f6tigt ein fester Sauerteigansatz mehr Zeit zum Reifen, bleibt daf\u00fcr aber auch l\u00e4nger reif. Roggenmehl ist n\u00e4hrstoffreicher und beg\u00fcnstigt dadurch eine schnellere Fermentation. Sobald der Sauerteig aktiv und kr\u00e4ftig genug ist, kann man auf reines Weizenmehl (oder einen Mehltyp nach Wahl) umsteigen. Das sorgt f\u00fcr eine ideale Umgebungstemperatur und beschleunigt die Fermentation.<\/p>\n\n\n\n<p>Am Abend noch mal alles gut durchr\u00fchren. Durch das Umr\u00fchren wird die Nahrung f\u00fcr die Bakterien neu verteilt und die Fermentation angekurbelt.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Tag 2<\/h5>\n\n\n\n<p>20 g glattes Roggenmehl, 20 g lauwarmes Wasser und eine kleine Menge Honig zum Glas hinzuf\u00fcgen und gut verr\u00fchren.<\/p>\n\n\n\n<p>Am Abend kann man \u00fcblicherweise wieder etwas Wachstum und Aktivit\u00e4t im Glas erkennen. Wieder alles gut durchr\u00fchren und \u00fcber Nacht ruhen lassen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Tag 3<\/h5>\n\n\n\n<p>Zwischen Tag 2 und Tag 3 kann man oft eine  anf\u00e4nglich starke Aktivit\u00e4t im Glas erkennen.  Das Anstellgut bekommt eine Mousse-\u00e4hnliche Textur mit vielen kleinen Luftbl\u00e4schen.<\/p>\n\n\n\n<p>Die H\u00e4lfte des Anstellguts entsorgen und mit 20 g Roggenmehl, 20 g Wasser und ein wenig Honig auffrischen und verr\u00fchren.<\/p>\n\n\n\n<p>Am Abend wieder durchr\u00fchren.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Tag 4<\/h5>\n\n\n\n<p>An Tag 4 wird der Sauerteig mit einer Mischung aus Roggen- und Weizenmehl gef\u00fcttert.<br>Die H\u00e4lfte des Anstellguts entsorgen und mit 10 g Roggenmehl, 10 g Weizenmehl, 20 g Wasser und ein wenig Honig auffrischen und verr\u00fchren.<\/p>\n\n\n\n<p>Am Abend kann man \u00fcblicherweise wieder etwas Wachstum und einige Luftbl\u00e4schen im Glas erkennen. Wieder alles gut durchr\u00fchren und \u00fcber Nacht ruhen lassen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Tag 5<\/h5>\n\n\n\n<p>Alles bis auf 30 g des Anstellguts entsorgen. Mit 30 g Wasser und 30 g Mehl auffrischen und verr\u00fchren. Man kann das Anstellgut weiterhin mit einer Mischung aus Roggen- und Weizenmehl f\u00fcttern oder auf eine beliebige Mehlsorte umsteigen. Ich f\u00fcttere meinen Sauerteig am liebsten mit reinem Weizenmehl. Dadurch erzielt man tendenziell ein milderes Geschmacksprofil.<\/p>\n\n\n\n<p>Am Abend wieder durchr\u00fchren.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Tag 6<\/h5>\n\n\n\n<p>Ab Tag 6 wird der Sauerteig in der Fr\u00fch und am Abend gef\u00fcttert. Es wird auch die Mehlmenge erh\u00f6ht, um den fl\u00fcssigen Sauerteig in ein festes Anstellgut umzuwandeln.<\/p>\n\n\n\n<p>An Tag 6 wird das Anstellgut morgens uns abends gef\u00fcttert und die Mehlmenge erh\u00f6ht, um das fl\u00fcssige Anstellgut in einen festen Sauerteig umzuwandeln. In der Fr\u00fch alles bis auf 30 g des Anstellguts entsorgen und mit 30 g Wasser und 60 g Mehl auffrischen. Die Konsistenz des Sauerteigs wird dadurch \u00e4hnlich wie Brotteig. Zum Mischen kann man den Sauerteig kurz in den Handfl\u00e4chen kneten, bis alles gut vermengt ist. Dann wieder zur\u00fcck ins Glas geben und ruhen lassen.<\/p>\n\n\n\n<p>Am Abend den gleichen Vorgang wiederholen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Tag 7<\/h5>\n\n\n\n<p>Die gleichen Schritte wie an Tag 6 wiederholen und zweimal t\u00e4glich f\u00fcttern. Der Sauerteig sollte nach dem F\u00fcttern sein Volumen verdoppeln, durch und durch mit vielen Luftbl\u00e4schen versetzt sein und ein leicht s\u00e4uerliches und joghurtartiges Aroma haben. Wenn der Sauerteig innerhalb von 4-6 Stunden nach der F\u00fctterung zuverl\u00e4ssig sein Volumen verdoppelt, ist es ein gutes Zeichen daf\u00fcr, dass er aktiv und einsatzbereit ist. Wenn er noch nicht genug Triebkraft hat, sollte man ihn noch ein paar Tage l\u00e4nger zweimal t\u00e4glich f\u00fcttern.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Tag 8 und dar\u00fcber hinaus<\/h5>\n\n\n\n<p>Alles bis auf 30 g des Anstellguts entsorgen. 30 g Wasser hinzuf\u00fcgen und Sauerteig im Wasser aufl\u00f6sen. 60 g Mehl hinzuf\u00fcgen und mit einer Gabel vermischen.  Kurz kneten, bis alles gut vermengt ist. An einem warmen Ort ca. 4- 6 Stunden gehen lassen. Der Sauerteig ist aktiv und einsatzbereit, wenn sich sein Volumen deutlich vergr\u00f6\u00dfert hat (verdoppelt oder sogar verdreifacht), er viele Luftbl\u00e4schen enth\u00e4lt, ein angenehmes Aroma und eine leicht gew\u00f6lbte Oberfl\u00e4che hat. Wenn der Sauerteig noch nicht genug Triebkraft hat, sollte man ihn noch ein paar Tage l\u00e4nger zweimal t\u00e4glich f\u00fcttern.<\/p>\n\n\n\n<p><em><strong>Siehe Fotos unten:<\/strong>&nbsp;Das Anstellgut hat sein Volumen innerhalb von 5 Stunden mehr als verdoppelt. Der Sauerteig ist reif und einsatzbereit, wenn sich sein Volumen deutlich vergr\u00f6\u00dfert (verdoppelt oder sogar verdreifacht) hat, er viele Luftbl\u00e4schen enth\u00e4lt, ein angenehmes Aroma und eine leicht gew\u00f6lbte Oberfl\u00e4che hat.
