Die gef\u00fcllten Teigtaschen gibt es in unterschiedlichsten Gr\u00f6\u00dfen und Formen. Hier findest du 5 verschiedene Methoden, wie man Ravioli  selber machen kann. Um die Ravioli zu formen, kann man spezielles Ravioli-Equipment verwenden (siehe Optionen unten) oder einfach Utensilien verwenden, die man h\u00f6chstwahrscheinlich bereits zu Hause hat. Ravioli werden traditionell mit d\u00fcnnen Teigplatten aus frischem Pastateig hergestellt und k\u00f6nnen mit allem gef\u00fcllt werden, was das Herz begehrt. Den Teig mindestens 10 Minuten lang kr\u00e4ftig durchkneten. In Frischhaltefolie einwickeln und mindestens 30 Minuten bei Zimmertemperatur rasten lassen. Den Ricotta, die Schale und den Saft einer kleinen Zitrone, geriebenen Parmesan, Salz und Pfeffer in einer Sch\u00fcssel vermischen. Die F\u00fcllung in einen Spritzbeutel f\u00fcllen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Ein Backbleck mit Hartweizenmehl bemehlen und zur Seite stellen. Ein Viertel des Teiges abschneiden und den Rest gut in Frischhaltefolie eingewickelt lassen. Wenn sie an der Wasseroberfl\u00e4che treiben, kann man testen, ob sie fertig sind. Wenn sie al dente sind, mit einem Schauml\u00f6ffel vorsichtig aus dem Wasser heben und direkt in die fertige Sauce geben. Mit einer Ravioli Form<\/h3>\n\n\n\n<p>Eine Ravioliform leicht mit Hartweizenmehl best\u00e4uben, damit die Pasta nicht an der Form haften bleibt. Eine Teigplatte \u00fcber die Form legen und mit einem Fingerkn\u00f6chel vorsichtig in die Vertiefungen dr\u00fccken. Die F\u00fcllung gleichm\u00e4\u00dfig in die Vertiefungen spritzen. Nicht zu viel verwenden, sonst l\u00e4uft man Gefahr, dass die Ravioli nicht ganz dicht sind und beim Kochen aufplatzen.<\/p>\n\n\n\n<p>Sollte der Teig etwas trocken sein, kann man ihn mit einem feinen Spr\u00fchnebel aus einer Entfernung von ca. 30 cm leicht bespr\u00fchen. Das sorgt daf\u00fcr, dass die Nudelplatten gut aneinander haften und die Ravioli dicht sind. Darauf achten, dass man nicht zu viel Wasser verwendet, da der Teig sonst matschig wird und an der Arbeitsfl\u00e4che kleben bleibt. Eine zweite Teigplatte dar\u00fcber legen. Mit den Handfl\u00e4chen glatt streichen und \u00fcbersch\u00fcssige Luft rausdr\u00fccken. Wenn die Ravioli Lufteinschl\u00fcsse haben, k\u00f6nnen sie beim Kochen platzen. Mit einem kleinen Nudelholz und gleichm\u00e4\u00dfigem Druck von unten nach oben \u00fcber die Form rollen und die Ravioli versiegeln. Vorsichtig aus der Form heben und mit einem geriffelten Teigrad entlang der Markierungen der Form schneiden. Die Teigreste entfernen und in Frischhaltefolie eingewickelt aufbewahren. Man kann die Reste noch einmal ausrollen (meine bevorzugte Methode) oder als Suppeneinlage verwenden. Die fertigen Ravioli auf das vorbereitete Backblech legen. Wenn sich der Teig trocken anf\u00fchlt, aus einem Abstand von ca. 30 cm mit Wasser bespr\u00fchen. Eine zweite Nudelplatte \u00fcber die F\u00fcllung drapieren. Den Teig mit den Zeigefingern um die F\u00fclle herum andr\u00fccken und \u00fcbersch\u00fcssige Luft rauspressen. Einen Ravioli Ausstecher jeweils \u00fcber der F\u00fcllung platzieren und  gerade nach unten dr\u00fccken. Dann mit gleichm\u00e4\u00dfigem Druck im Uhrzeigersinn drehen. Das sorgt f\u00fcr einen sauberen Schnitt und glatte Kanten. Die Teigreste entfernen und aufbewahren.
