Der Sauerteig ist einsatzbereit, wenn sich sein Volumen verdoppelt hat, er viele kleine Luftbl\u00e4schen enth\u00e4lt und die Oberfl\u00e4che noch leicht gew\u00f6lbt ist. Sobald der Sauerteig reif ist, die ben\u00f6tigte Menge f\u00fcr das Rezept entnehmen und den Rest bis zur n\u00e4chsten Verwendung im K\u00fchlschrank lagern.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Den Hauptteig zubereiten: In einer R\u00fchrsch\u00fcssel den aktiven Sauerteig, Wasser, Mehl und Salz vermengen. Mit einem Teigbesen oder einer Gabel alles zu einem groben Teig verr\u00fchren. Anschlie\u00dfend kurz kneten, bis das Mehl vollst\u00e4ndig eingearbeitet ist. Anschlie\u00dfend in eine leicht ge\u00f6lte Sch\u00fcssel geben und mit einem feuchten Geschirrtuch bedecken.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Den Teig f\u00fcr 3.5. - 4 Stunden an einem warmen Ort gehen lassen. Am Ende der Stockgare sollte der Teig sein Volumen deutlich vergr\u00f6\u00dfert (aber nicht zwingend verdoppelt) haben. Es sollten viele kleine Luftbl\u00e4schen im Teig und an der Oberfl\u00e4che erkennbar sein. Den Teig aus dem G\u00e4rk\u00f6rbchen auf ein St\u00fcck Backpapier st\u00fcrzen und f\u00fcr 25 Minuten im Gusseisen-Br\u00e4ter backen. Danach das Brot vorsichtig aus dem Br\u00e4ter nehmen und ca. 15 Minuten direkt auf dem Rost fertig backen, bis das Brot eine dunkle Kruste hat.
