An einem warmen Ort (ca. 28 \u00b0 C) f\u00fcr etwa 4 Stunden gehen lassen, bis der Sauerteig sein Volumen verdoppelt hat und darin viele kleine Luftbl\u00e4schen zu sehen sind.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Etwa zwei Stunden bevor der Sauerteig reif sein wird, mit der Autolyse beginnen: Dazu das Mehl mit 200 g Wasser mischen und abgedeckt bei Raumtemperatur ruhen lassen. Das st\u00e4rkt das Teigger\u00fcst und der Teig muss dadurch sp\u00e4ter weniger geknetet werden.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Den aktiven Sauerteig mit dem restlichen Wasser (40 g) vermischen und zu dem Autolyse-Teig hinzuf\u00fcgen. Das Salz und das Oliven\u00f6l beigeben und alles zu einem groben Teig vermischen. <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#slap-and-fold\" title=\"\">ein paar Minuten lang dehnen und falten,<\/a> bis er sich glatt und elastisch anf\u00fchlt. Den Teig in eine leicht ge\u00f6lte Sch\u00fcssel geben, mit einem feuchten Tuch abdecken und an einem warmen Ort gehen lassen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>W\u00e4hrend der Teig wird er zweimal <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#coil-fold\" title=\"\">gedehnt &amp; gefaltet<\/a> und einmal <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#lamination\" title=\"\">laminiert<\/a> In folgender Reihenfolge: 45 Minuten nach dem Mischen den Teig dehnen und falten. 30 Minuten sp\u00e4ter den Teig laminieren: Dazu die Arbeitsfl\u00e4che befeuchten und den Teig dehnen und so d\u00fcnn wie m\u00f6glich auseinanderziehen, aber darauf achten, dass er dabei nicht rei\u00dft. Dann die Oliven gleichm\u00e4\u00dfig darauf verteilen und den Teig wieder zu einem P\u00e4ckchen zusammenlegen. 30 Minuten sp\u00e4ter den Teig noch einmal dehnen und falten und f\u00fcr weitere 1.5 Stunden gehen lassen. Am Ende der Stockgare sollte der Teig ein deutlich gr\u00f6\u00dferes Volumen haben und luftig aussehen. Wenn er noch kompakt ist und keine Luftbl\u00e4schen zu sehen sind, muss er noch l\u00e4nger gehen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 5<\/h5>\n\n\n\n<p>Den Teig auf eine leicht bemehlte Arbeitsfl\u00e4che st\u00fcrzen und die Kanten zur Mitte hin einschlagen, bis ein runder Teigling entsteht. Den Teigling umdrehen (mit dem Schluss nach unten) und 30 Minuten auf der Arbeitsfl\u00e4che ruhen lassen. Dann wieder umdrehen und zu einem&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/how-to-shape-sourdough\/#batard\" title=\"\">l\u00e4nglichen Laib formen.<\/a>Den Teig in ein bemehltes G\u00e4rk\u00f6rbchen legen und f\u00fcr eine kalte Teigruhe \u00fcber Nacht in den K\u00fchlschrank stellen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 6<\/h5>\n\n\n\n<p>Am n\u00e4chsten Morgen den Ofen mit dem Gusseisen-Br\u00e4ter auf 240\u00b0 C vorheizen. Den Teig auf ein St\u00fcck Backpapier st\u00fcrzen, mit dem B\u00e4ckermesser einschneiden und f\u00fcr 20 Minuten im Br\u00e4ter backen. Dann die Temperatur auf 220\u00b0 C reduzieren und das Brot f\u00fcr ca. 18 - 20 Minuten direkt auf dem Rost fertig backen. Vor dem Anschneiden vollst\u00e4ndig ausk\u00fchlen lassen.&nbsp;<\/p>\n\n\n<style>.wp-block-kadence-advancedgallery Dann die Oliven gleichm\u00e4\u00dfig darauf verteilen und den Teig wieder zu einem P\u00e4ckchen zusammenlegen. 30 Minuten sp\u00e4ter den Teig noch einmal dehnen und falten und f\u00fcr weitere 1.5 Stunden gehen lassen. Am Ende der Stockgare sollte der Teig ein deutlich gr\u00f6\u00dferes Volumen haben und luftig aussehen.
