Die Grundlage f\u00fcr die Zubereitung von Pappardelle ist&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/italian-pasta-dough-recipe\/\">frischer Pastateig.<\/a>&nbsp;Pappardelle kommen urspr\u00fcnglich aus der Toskana und werden h\u00e4ufig mit deftigen Rag\u00f9s serviert - zum Beispiel mit<a href=\"https:\/\/notjustfood.blog\/de\/slow-cooked-lamb-ragu-with-pappardelle\/\">&nbsp;Lammragout.<\/a>Der Teig wird d\u00fcnn ausgerollt und in ca. 2 - 3 cm breite Bandnudeln geschnitten (siehe has-theme-palette-2-color has-text-color\">Schritt 1<\/h5>\n\n\n\n<p>Das Grundrezept f\u00fcr&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/italian-pasta-dough-recipe\/\">frischen Pastateig zubereiten:<\/a>&nbsp;Das Mehl auf die Arbeitsfl\u00e4che kippen und eine Mulde darin formen. Die Eier in die Mulde schlagen und mit einer Gabel das Mehl und die Eier in der Mitte vermischen. Nach und nach mehr Mehl von den R\u00e4ndern hinzuf\u00fcgen, bis eine dickfl\u00fcssige Masse entsteht. Dann mit einer Teigkarte das restliche Mehl in die Masse einarbeiten und alles zu einem groben Teig vermengen. Den Teig 10 Minuten lang kneten, bis er glatt und elastisch ist. In Frischhaltefolie einwickeln und mindestens 30 Minuten bei Zimmertemperatur ruhen lassen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Ein Viertel des Teiges abschneiden und den Rest in der Folie eingewickelt lassen. Den Teig zu d\u00fcnnen&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/fresh-pasta-sheets\/\">Teigplatten ausrollen.<\/a>&nbsp;Ich bevorzuge Pappardelle etwas dicker als andere Nudelformen und h\u00f6re bei Stufe 5 auf zu rollen. Auf der letzten Stufe den Teig zweimal durchrollen. Die Teigplatte in kleinere Rechtecke schneiden (L\u00e4ngsseite ca. 30 cm) und flach auf ein bemehltes Backblech legen. Mit dem restlichen Teig wiederholen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Eine der Teigplatten nehmen und auf beiden Seiten leicht mit Hartweizenmehl bemehlen. Das verhindert, dass die Bandnudeln sp\u00e4ter zusammenkleben. Wenn man die Pappardelle mit einem Messer schneidet, rollt man die Teigplatte locker der L\u00e4nge nach zu einer Rolle ein und schneidet sie dann in ca. 2 \u2013 3 cm breite Streifen. Die Bandnudeln dann wieder auseinander rollen und flach \u00fcbereinander stapeln. Alternativ mit einem Teigschneider die Teigplatte der L\u00e4nge nach in Streifen schneiden und anschlie\u00dfend \u00fcbereinander stapeln (siehe Video unten). Die gestapelten Bandnudeln zu Nudelnestern zusammendrehen und auf ein bemehltes Backblech legen. Den Vorgang mit den restlichen Teigplatten wiederholen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>Die Pappardelle in reichlich gesalzenem Wasser f\u00fcr ca. 3 Minuten kochen, bis sie al dente sind und mit einer Sauce nach Wahl servieren.&nbsp;<\/p>\n\n\n<style>.kb-image2255_c15890-da Wenn man die Pappardelle mit einem Messer schneidet, rollt man die Teigplatte locker der L\u00e4nge nach zu einer Rolle ein und schneidet sie dann in ca. 2 \u2013 3 cm breite Streifen. Die Bandnudeln dann wieder auseinander rollen und flach \u00fcbereinander stapeln. Alternativ mit einem Teigschneider die Teigplatte der L\u00e4nge nach in Streifen schneiden und anschlie\u00dfend \u00fcbereinander stapeln (siehe Video unten). Die gestapelten Bandnudeln zu Nudelnestern zusammendrehen und auf ein bemehltes Backblech legen.
