Das Fleisch wird zuerst scharf angebraten und dann mit Zwiebeln, Karotten, Sellerie und gehackten Tomaten in Lammfond und Rotwein langsam geschmort. Es wird dadurch besonders zart und m\u00fcrbe. Das Fleisch gleichm\u00e4\u00dfig mit einer d\u00fcnnen Schicht Mehl best\u00e4uben.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p><strong>Das Fleisch und das Gem\u00fcse anbraten:<\/strong>&nbsp;Einen Schmortopf auf dem Herd vorw\u00e4rmen und einen Essl\u00f6ffel Oliven\u00f6l darin erhitzen. Das Fleisch bei hoher Hitze von allen Seiten scharf anbraten. Dann aus dem Topf nehmen und in einer Sch\u00fcssel zur Seite stellen. Die Temperatur auf mittlere Hitze reduzieren und das restliche Oliven\u00f6l in den Topf geben. Zwiebel, Karotten und Sellerie mit dem Tomatenmark vermischen und anschwitzen. Unter gelegentlichem R\u00fchren etwa 7-10 Minuten d\u00fcnsten. Mit Salz und Pfeffer w\u00fcrzen. Knoblauch und Rosmarin hinzuf\u00fcgen und noch 1 - 2 Minuten d\u00fcnsten. Mit Rotwein abl\u00f6schen und etwas einkochen lassen. Zum Fortfahren eine der beiden unten beschriebenen Methoden ausw\u00e4hlen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p><strong>Im Schongarer:<\/strong>&nbsp;Nach dem Abl\u00f6schen mit Rotwein die Gem\u00fcse-Basis in den Schongarer umf\u00fcllen und mit dem Lammfond aufgie\u00dfen. Die gehackten Tomaten, die Lorbeerbl\u00e4tter und das Fleisch hinzuf\u00fcgen. Das Rag\u00f9 bei niedriger Temperatur f\u00fcr 6 Stunden schmoren, bis das Fleisch zart und m\u00fcrbe ist. Die Lorbeerbl\u00e4tter entfernen und das Rag\u00f9 abschmecken. Falls n\u00f6tig, mit Salz und Pfeffer noch etwas nachw\u00fcrzen.&nbsp;<\/p>\n\n\n\n<p><strong>Im Schmortopf:<\/strong>&nbsp;Den Ofen auf 160\u00b0 C vorheizen. Nach dem Abl\u00f6schen mit Rotwein die Gem\u00fcse-Basis mit dem Lammfond aufgie\u00dfen. Die gehackten Tomaten, die Lorbeerbl\u00e4tter und das Fleisch hinzuf\u00fcgen. Den Deckel auflegen und bei mittlerer Hitze leicht zum K\u00f6cheln bringen. Sobald es k\u00f6chelt, den Schmortopf in den Ofen geben und ca. 2 - 3 Stunden schmoren, bis das Fleisch zart und m\u00fcrbe ist. Die Lorbeerbl\u00e4tter entfernen und das Rag\u00f9 abschmecken. Falls n\u00f6tig, noch etwas mit Salz und Pfeffer nachw\u00fcrzen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p><strong>Die Pasta kochen:<\/strong>&nbsp;Wasser in einem gro\u00dfen Topf zum Kochen bringen und reichlich salzen. W\u00e4hrenddessen das Rag\u00f9 in einer tiefen Pfanne zum K\u00f6cheln bringen und die Pasta nach Packungsanleitung kochen bzw. frische Pasta ca. 2 Minuten al dente kochen. Mit einem Schauml\u00f6ffel oder einer Spaghettizange abseihen und direkt in die Pfanne zum Rag\u00f9 geben. Kurz durchschwenken und mischen, bis die Pasta gleichm\u00e4\u00dfig mit Sauce \u00fcberzogen ist.
