Die Zubereitung ist einfach. Man ben\u00f6tigt nur Wasser, Mehl, Salz und ein&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/stiff-sourdough-starter\/\">Sauerteiganstellgut<\/a>Durch eine lange Teigruhe \u00fcber Nacht im K\u00fchlschrank wird der Pizzateig besonders aromatisch. class=\"wp-block-heading\">Schritt-f\u00fcr-Schritt Anleitung<\/h2>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 1<\/h5>\n\n\n\n<p><strong>Den Sauerteig auffrischen:<\/strong>&nbsp;In der Fr\u00fch das Anstellgut mit Mehl und Wasser mischen und kurz kneten, bis eine homogene Masse entsteht. An einem warmen Ort (ca. 28\u00b0 C) f\u00fcr ca.  4-6 Stunden gehen lassen, bis der Sauerteig aktiv ist und sein Volumen verdoppelt hat.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p><strong>Den Hauptteig zubereiten:<\/strong>&nbsp;Den aktiven Sauerteigansatz mit dem Wasser f\u00fcr den Hauptteig vermischen und darin aufl\u00f6sen. Das Mehl hinzuf\u00fcgen und alles vermengen, bis ein grober Teig entsteht. Mit Frischhaltefolie oder einem feuchten Geschirrtuch bedecken und ca. 30 Minuten ruhen lassen. Dann das Salz hinzuf\u00fcgen und den Teig ca. 5 Minuten kneten, bis er sich glatt und elastisch anf\u00fchlt.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p><strong>Den Teig gehen lassen:<\/strong>&nbsp;Den Teig in eine leicht ge\u00f6lte Sch\u00fcssel geben,  Frischhaltefolie oder einem feuchten Geschirrtuch abdecken und an einem warmen Ort (ca. 28 \u00b0C) f\u00fcr  ca. 4 Stunden gehen lassen, bis er luftig aussieht.  Wenn er nach 4 Stunden noch kompakt aussieht, muss er noch l\u00e4nger gehen. Je w\u00e4rmer die Umgebungstemperatur ist, desto schneller geht der Teig auf.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p><strong>Runde Teiglinge formen:<\/strong>Den Teig in zwei gleich gro\u00dfe St\u00fccke teilen. Die R\u00e4nder der Teiglinge jeweils von au\u00dfen \u00fcberlappend zur Mitte hin einschlagen, <a href=\"https:\/\/notjustfood.blog\/de\/how-to-shape-sourdough\/#pre-shape\" title=\"\">bis eine runde Form entsteht.<\/a>. Flip the dough over (with the seam side down).&nbsp; Using both hands, pull the dough towards you in a circular motion until it has a smooth surface and holds its shape easily. Avoid using too much flour on your work surface while shaping the dough balls. The dough should lightly stick to the counter to create surface tension. Place the dough balls back into a lightly oiled proofing container. Cover and transfer it to the fridge to proof overnight, or for up to 48 hours.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 5<\/h5>\n\n\n\n<p><strong>Den Ofen vorheizen und die Tomatensauce zubereiten:<\/strong>&nbsp;Den Ofen bei h\u00f6chster Temperatur vorheizen, idealerweise mit einem Pizzastein oder Backstahl darin. Wenn man einen Pizzaofen verwendet, den Ofen auf 400 \u2013 450 \u00b0C vorheizen. W\u00e4hrend der Ofen vorheizt, die Tomatensauce zubereiten. Die Dosentomaten, Salz und Oliven\u00f6l in eine Sch\u00fcssel geben. Die Basilikumbl\u00e4tter mit den Fingern in kleine St\u00fccke rei\u00dfen und hinzuf\u00fcgen. Die Tomaten mit einer Gabel zerkleinern oder mit den H\u00e4nden zerdr\u00fccken und alles gut vermischen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 6<\/h5>\n\n\n\n<p><strong>Den Teig ausziehen und die Pizza belegen:<\/strong>&nbsp;Den Teig etwa 1-2 Stunden vor der Weiterverarbeitung aus dem K\u00fchlschrank nehmen und auf Raumtemperatur kommen lassen. Sobald der Ofen die gew\u00fcnschte Temperatur erreicht hat, kann man den Teig ausrollen. Dazu die Teigkugeln auf einer bemehlten Arbeitsfl\u00e4che mit der Handfl\u00e4che leicht flachdr\u00fccken. Dann mit den Fingerspitzen die Luft von der Mitte nach au\u00dfen hin rausdr\u00fccken und au\u00dfen einen Rand von etwa 1-2 cm frei lassen, der nicht flachgedr\u00fcckt wird. Dadurch entsteht eine luftige Kruste. Beide Handr\u00fccken vorsichtig unter den Teig schieben, anheben und ihn dabei vorsichtig bis zur gew\u00fcnschten Gr\u00f6\u00dfe dehnen. Den Teig auf eine Pizzaschaufel oder ein Backblech legen, die Tomatensauce darauf verteilen und nach Wunsch belegen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 7<\/h5>\n\n\n\n<p><strong>Die Pizza backen:&nbsp;<\/strong><br><strong><em>In einem Pizzaofen:<\/em><\/strong>&nbsp;Die Pizza f\u00fcr ca. 1 - 2 Minuten backen, bis Kruste luftig und gut gebr\u00e4unt aussieht.&nbsp;<\/p>\n\n\n\n<p><em><strong>In einem herk\u00f6mmlichen Ofen:<\/strong><\/em>&nbsp;Die Pizza bei 230\u00b0 C (bzw. bei H\u00f6chsttemperatur) mit Ober- und
