Das warme Wasser in die Mulde gie\u00dfen und mit einer Gabel die Zutaten in der Mitte vermischen. Nach und nach mehr Mehl von den R\u00e4ndern hinzuf\u00fcgen, bis ein grober Teig entsteht. Den Teig 10 Minuten lang kneten, bis er glatt und elastisch ist. In Frischhaltefolie wickeln und mindestens 30 Minuten oder idealerweise bis zu 2 Stunden bei Zimmertemperatur ruhen lassen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Ein Viertel des Teiges abschneiden und den Rest in Frischhaltefolie eingewickelt lassen. Der Teig w\u00f6lbt sich dabei \u00fcber das Messer. Dadurch entsteht die charakteristische raue Struktur auf der Oberfl\u00e4che. Danach dreht man die Orecchiette von innen nach au\u00dfen \u00fcber dem Daumen um, damit die Vertiefung in der Mitte entsteht. Den genauen Ablauf sieht man am besten im Video unten. Den Vorgang mit dem restlichen Teig wiederholen. Die fertige Pasta unbedeckt ca. 1 - 2 Stunden bei Raumtemperatur etwas antrocknen lassen. Das sorgt daf\u00fcr, dass die Pasta beim Kochen ihre gew\u00f6lbte Form beh\u00e4lt. Wenn man die Orecchiette sofort kocht, kann es passieren, dass sie im Wasser ihre Form verlieren und flach werden.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 5<\/h5>\n\n\n\n<p>Einen gro\u00dfen Topf mit Wasser zum Kochen bringen und reichlich salzen. Die Orecchiette etwa 2 \u2013 3 Minuten bissfest kochen. Frische Nudeln kochen um einiges schneller als getrocknete Pasta. Die Nudeln mit einem Schauml\u00f6ffel direkt zur gew\u00fcnschten Sauce hinzuf\u00fcgen und schwenken, bis sie gleichm\u00e4\u00dfig bedeckt sind.&nbsp;<\/p>\n\n\n<style>.kb-image2537_c006b3-d5
