Der Teig wird mit einer Mischung aus Roggenvollkornmehl und Weizenmehl hergestellt und mit Sauerteig nat\u00fcrlich gelockert. Die Sonnenblumenkerne sorgen f\u00fcr eine nussige Geschmacksnote und eine saftige Krume. has-text-color\">Schritt 1<\/h5>\n\n\n\n<p>In der Fr\u00fch den Sauerteig auffrischen: Das Anstellgut mit Wasser verr\u00fchren, bis sich der Sauerteig fast vollst\u00e4ndig aufgel\u00f6st hat. Das Mehl hinzuf\u00fcgen und mischen, bis es vollst\u00e4ndig eingearbeitet ist. Den Sauerteig an einem warmen Ort (26 \u2013 28 \u00b0C) gehen lassen, bis er sein Volumen verdoppelt oder verdreifacht hat. In einer warmen Umgebung dauert das in etwa 4 \u2013 6 Stunden.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Sobald der Sauerteig aktiv ist, den Hauptteig zubereiten. In einer R\u00fchrsch\u00fcssel den Sauerteig, das Wasser und den Honig vermischen. Gut verr\u00fchren, bis sich der Sauerteig fast vollst\u00e4ndig aufgel\u00f6st hat und die Fl\u00fcssigkeit milchig aussieht. Die beiden Mehlsorten hinzuf\u00fcgen und alles zu einem groben Teig vermengen. Die Sch\u00fcssel abdecken und etwa 1 Stunde lang auf der Arbeitsfl\u00e4che ruhen lassen. In der Zwischenzeit die Sonnenblumenkerne in hei\u00dfem Wasser einweichen und beiseitestellen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Anschlie\u00dfend das Salz, die eingeweichten Sonnenblumenkerne und das \u00d6l hinzuf\u00fcgen. Ein paar Minuten kneten, bis alles gut vermischt ist. Da Roggenteig dazu neigt sehr klebrig zu sein, hilft es, wenn man die H\u00e4nde vor dem Kneten nass macht. Die Sch\u00fcssel abdecken und den Teig etwa 4 Stunden an einem warmen Ort gehen lassen. Der Teig kann geformt werden, wenn er deutlich an Volumen zugelegt hat und viele kleine Luftbl\u00e4schen enth\u00e4lt. Wenn der Teig nach 4 Stunden immer noch sehr kompakt aussieht, braucht er mehr Zeit zum Gehen und \/ oder eine w\u00e4rmere Umgebungstemperatur. Sauerteig fermentiert am besten bei Temperaturen zwischen 25 \u2013 28 \u00b0C.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>Die Kastenform mit Backpapier auslegen und den Teig auf eine leicht bemehlte Arbeitsfl\u00e4che st\u00fcrzen. Den Teig zu einem Rechteck flach dr\u00fccken. Die kurze Seite sollte in etwa die L\u00e4nge der Kastenform haben. Den Teig zu einer Rolle aufrollen und  mit dem Schluss nach unten in die Kastenform legen. Die Oberfl\u00e4che mit Wasser bespr\u00fchen und mit Sonnenblumenkernen bestreuen.
