has-text-color\">Schritt 1<\/h5>\n\n\n\n<p>Am Vorabend den Sauerteig auffrischen: Den Sauerteigansatz mit Wasser verr\u00fchren, bis er fast vollst\u00e4ndig aufgel\u00f6st ist. Dann das Mehl hinzuf\u00fcgen und alles zu einem gleichm\u00e4\u00dfigen Teig vermengen. Abdecken und \u00fcber Nacht bei Zimmertemperatur gehen lassen. Am n\u00e4chsten Morgen sollte der Sauerteig sein Volumen verdoppelt haben und aktiv sein.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Am n\u00e4chsten Morgen den Hauptteig zubereiten: In einer R\u00fchrsch\u00fcssel den aktiven Sauerteig im Wasser aufl\u00f6sen und das Mehl hinzuf\u00fcgen. Die Zutaten zu einem groben Teig vermengen und die Sch\u00fcssel abdecken. Den Teig f\u00fcr ca. 1 Stunde bei Zimmertemperatur rasten lassen. Das sorgt daf\u00fcr, dass das Mehl das Wasser vollst\u00e4ndig aufnehmen kann und f\u00f6rdert die Elastizit\u00e4t des Teiges.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Das Salz hinzuf\u00fcgen und mit nassen H\u00e4nden in den Teig einarbeiten. <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#stretch-and-fold\" title=\"\">Den Teig f\u00fcr ein paar Minuten dehnen und falten<\/a> , bis er sich glatt und elastisch anf\u00fchlt. Anschlie\u00dfend den Teig in eine leicht ge\u00f6lte Auflaufform geben und an einem warmen Ort ( ca. 28 \u00b0 C) gehen lassen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>Um das Teigger\u00fcst weiter zu st\u00e4rken, wird der Teig w\u00e4hrend der Teigruhe <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#coil-fold\" title=\"\">sechsmal in regelm\u00e4\u00dfigen Abst\u00e4nden gedehnt und gefaltet<\/a> (siehe Video unten). Zuerst dreimal alle 15 Minuten und anschlie\u00dfend dreimal alle 30 Minuten. Danach den Teig noch weitere drei Stunden ruhen lassen. Wenn der Teig sein Volumen deutlich vergr\u00f6\u00dfert hat und luftig aussieht, kann er weiterverarbeitet werden. Wenn er noch kompakt ist, muss er l\u00e4nger gehen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 5<\/h5>\n\n\n\n<p>Ein Backblech mit Backpapier auslegen und zur Seite stellen. Den Teig auf eine bemehlte Arbeitsfl\u00e4che st\u00fcrzen und auch die Teigoberfl\u00e4che gro\u00dfz\u00fcgig bemehlen. Mit einer Teigkarte den Teig in sechs Rechtecke teilen und  auf das Backblech legen. Mit einem Geschirrtuch bedecken und eine Stunde ruhen lassen. W\u00e4hrend der letzten 30 Minuten der Teigruhe den Ofen auf 230\u00b0C vorheizen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 6<\/h5>\n\n\n\n<p>Die Ciabatta Br\u00f6tchen w\u00e4hrend der ersten 10 Minuten mit Dampf backen. Anschlie\u00dfend den Dampf ablassen und f\u00fcr weitere 10 Minuten backen, bis die Br\u00f6tchen goldbraun und knusprig sind.
