Die Eier in die Mulde schlagen und mit einer Gabel das Mehl und die Eier in der Mitte vermischen. Nach und nach mehr Mehl von den R\u00e4ndern hinzuf\u00fcgen, bis eine dickfl\u00fcssige Masse entsteht. Dann mit einer Teigkarte das restliche Mehl in die Masse einarbeiten und alles zu einem groben Teig vermengen. Den Teig 10 Minuten lang kneten, bis er glatt und elastisch ist. In Frischhaltefolie einwickeln und mindestens 30 Minuten bei Zimmertemperatur ruhen lassen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p><strong>W\u00e4hrend der Pastateig ruht, das Pesto zubereiten:&nbsp;<\/strong><\/p>\n\n\n\n<p><em><strong>Mit M\u00f6rser und St\u00f6\u00dfel:<\/strong><\/em><br>Den B\u00e4rlauch gr\u00fcndlich waschen und mit K\u00fcchenpapier trockentupfen. Anschlie\u00dfend in kleinere St\u00fccke zupfen oder schneiden. Den Knoblauch sch\u00e4len und mit einer Prise Salz im M\u00f6rser zu einer Paste stampfen. Den B\u00e4rlauch hinzuf\u00fcgen und mit kreisenden Bewegungen zerkleinern und m\u00f6rsern. Anschlie\u00dfend die Pinienkerne hinzuf\u00fcgen und den Vorgang wiederholen, bis sich die Zutaten zu einer Paste verbinden. Nach und nach den Parmesan unterr\u00fchren. Zuletzt das Oliven\u00f6l eintr\u00e4ufeln und alles zu einer gleichm\u00e4\u00dfigen und cremigen Konsistenz vermischen. Nach Belieben mit Salz und Pfeffer abschmecken.&nbsp;<br><br><em><strong>Mit einem Standmixer:&nbsp;<\/strong><\/em><br>Den B\u00e4rlauch gr\u00fcndlich waschen und trockentupfen. Anschlie\u00dfend mit den Pinienkernen, dem Knoblauch und einer Prise Salz im Standmixer zu einer groben Paste p\u00fcrieren. W\u00e4hrend der Mixer l\u00e4uft, langsam das Oliven\u00f6l eintr\u00e4ufeln und mixen, bis eine cremige Konsistenz entsteht. Die Masse in eine kleine R\u00fchrsch\u00fcssel umf\u00fcllen und nach und nach den Parmesan einr\u00fchren. Gegebenenfalls mit etwas Salz und Pfeffer nachw\u00fcrzen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p><strong>Die Pasta zubereiten:<\/strong><br>Die H\u00e4lfte des Teiges abschneiden und den Rest in Folie eingewickelt lassen. Das Teigst\u00fcck mit der Pastamaschine zu einer <a href=\"https:\/\/notjustfood.blog\/de\/fresh-pasta-sheets\/\">d\u00fcnnen Teigplatte ausrollen.<\/a>Die Teigplatte nach Wunsch in breite Bandnudeln <a href=\"https:\/\/notjustfood.blog\/de\/pappardelle-pasta\/\">(hausgemachte Pappardelle)<\/a> schneiden, oder mit einem Pasta-Aufsatz d\u00fcnnere Nudeln scheiden. Ich habe f\u00fcr dieses Rezept die Pasta bis Stufe 4 ausgerollt und mit dem Tagliolini-Aufsatz d\u00fcnne, Spaghetti-\u00e4hnliche Nudeln geschnitten. Die Pasta mit etwas Mehl best\u00e4uben und in kleine Nudelnester drehen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p><strong>Die Pasta kochen:<\/strong><br>Wasser in einem gro\u00dfen Topf zum Kochen bringen und reichlich salzen. W\u00e4hrenddessen das Pesto in einer Schwenkpfanne bei niedriger Hitze langsam erw\u00e4rmen (es sollte nicht k\u00f6cheln). Die Nudelnester ins kochende Wasser geben und ca. 1-3 Minuten \"al dente\" kochen. Frische Pasta kocht um einiges schneller als getrocknete Pasta. Einen Schuss Nudelwasser zum Pesto hinzuf\u00fcgen und zu einer geschmeidigen Sauce verr\u00fchren. Die Nudeln, sobald sie fertig sind, mit einer Zange oder Schaumkelle direkt in die Pfanne zum Pesto geben. Die Pasta schwenken und gr\u00fcndlich vermischen, bis alles gleichm\u00e4\u00dfig mit Pesto \u00fcberzogen ist. Gegebenenfalls noch ein wenig Nudelwasser hinzuf\u00fcgen, um die Sauce etwas aufzulockern. Gegebenenfalls noch ein wenig Nudelwasser hinzuf\u00fcgen, um die Sauce etwas aufzulockern.
