Beim Formen der Brotlaibe wird der Teig sanft gedehnt und gefaltet, bis er gen\u00fcgend Struktur und Spannung hat. Sollte der Teig klebrig sein, kann man f\u00fcr dabei die Arbeitsfl\u00e4che leicht bemehlen oder mit Wasser bespr\u00fchen. Zu viel Mehl sollte man allerdings vermeiden, da Teig sonst zu trocken wird. Zum Rundwirken (runde Teiglinge formen) faltet man die Kanten des Teiges \u00fcberlappend zur Mitte hin ein, bis eine runde Form entsteht. Den Teig anschlie\u00dfend umdrehen (mit dem Schluss nach unten) und mit beiden H\u00e4nden in kreisenden Bewegungen auf der Arbeitsfl\u00e4che rundschleifen, bis sich die Oberfl\u00e4che des Teiglings glatt und straff anf\u00fchlt. Die vorgeformten Teiglinge mit einem sauberen Tuch bedecken und ca. 20 - 45 Minuten ruhen lassen. Zun\u00e4chst die untere Kante zur Mitte hin einschlagen. Dann den Vorgang \nmit der Iinken und rechten Kante wiederholen. Zuletzt die obere Kante zur Mitte falten, bis ein kompaktes P\u00e4ckchen entsteht. Anschlie\u00dfend den Teig von unten nach oben straff zu einem Zylinder aufrollen. Ein paar Minuten mit dem Schluss nach unten auf der Arbeitsfl\u00e4che ruhen lassen und anschlie\u00dfend mit der Naht nach oben in ein bemehltes G\u00e4rk\u00f6rbchen legen. Den Teig im G\u00e4rk\u00f6rbchen gehen lassen und vor dem Backen mit einem B\u00e4ckermesser an der Oberfl\u00e4che einschneiden.
