und Mehl auffrischen. Alles zu einer homogenen Masse vermengen. F\u00fcr etwa 4 - 6 Stunden an einem warmen Ort gehen lassen, bis der Sauerteig aktiv ist und sein Volumen verdoppelt hat.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>In einer R\u00fchrsch\u00fcssel den aktiven Sauerteig mit dem Wasser vermengen, bis die Fl\u00fcssigkeit milchig wird und der Sauerteig sich fast vollst\u00e4ndig aufgel\u00f6st hat. Die beiden Mehlsorten hinzuf\u00fcgen und alles zu einem groben Teig vermengen. Die Sch\u00fcssel abdecken und den Teig etwa 30 Minuten auf der Arbeitsfl\u00e4che ruhen lassen. Dann das Salz hinzuf\u00fcgen und mit nassen H\u00e4nden einkneten (Roggenteige neigen dazu klebrig zu sein, daher hilft es, sich die H\u00e4nde vor dem Kneten anzufeuchten). Den Teig anschlie\u00dfend in eine leicht ge\u00f6lte Glassch\u00fcssel geben und ihn an einem warmen Ort (25 - 28\u00b0C) etwa 4 - 6 Stunden aufgehen lassen, bis er sein Volumen um etwa 50 % - 75 % vergr\u00f6\u00dfert hat und gelockert aussieht. Je w\u00e4rmer die Umgebungstemperatur, desto schneller geht der Teig auf.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Den Teig auf eine bemehlte Arbeitsfl\u00e4che st\u00fcrzen und zu einem runden Teigling&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/how-to-shape-sourdough\/#pre-shape\" title=\"\">vorformen.<\/a>&nbsp;Mit dem Schluss nach unten ca. 15 - 30 Minuten auf der Arbeitsfl\u00e4che ruhen lassen. Dann wieder umdrehen (mit dem Schluss nach oben) und zu einem&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/how-to-shape-sourdough\/#batard\" title=\"ovalen Laib formen.\">ovalen Laib formen.<\/a>Den Teig in ein bemehltes G\u00e4rk\u00f6rbchen legen, abdecken und \u00fcber Nacht im K\u00fchlschrank gehen lassen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>Den Ofen am n\u00e4chsten Morgen auf 230\u00b0 C vorheizen. Den Teig aus dem G\u00e4rk\u00f6rbchen auf ein St\u00fcck Backpapier st\u00fcrzen und die Oberfl\u00e4che mit einem B\u00e4ckermesser oder einer scharfen Rasierklinge der L\u00e4nge nach einschneiden. Das f\u00f6rdert den Ofentrieb und sorgt daf\u00fcr, dass das Brot beim Backen gut aufgeht. Das Brot f\u00fcr die ersten 15 Minuten mit Dampf backen (zum Beispiel in einem Gusseisentopf oder mit einer Auflaufform mit hei\u00dfem Wasser auf der unteren Schiene). Danach die Temperatur auf 210\u00b0 C reduzieren, den Dampf ablassen (den Deckel vom Topf nehmen bzw. die Auflaufform entfernen) und f\u00fcr weitere 15 - 20 Minuten fertig backen, bis die Kruste die gew\u00fcnschte Farbe hat und die Kerntemperatur etwa 93\u00b0 - 95\u00b0 C betr\u00e4gt. Das Brot vor dem Anschneiden vollst\u00e4ndig ausk\u00fchlen lassen.&nbsp;<\/p>\n\n\n<style>.wp-block-kadence-advancedgallery
