has-text-color\">Schritt 1<\/h5>\n\n\n\n<p>F\u00fcr den s\u00fc\u00dfen Sauerteig das Anstellgut mit Milch, Mehl und Zucker zu einem homogenen Vorteig verkneten. Den Sauerteig an einem warmen Ort (25\u00b0 - 28\u00b0 C) f\u00fcr etwa 4 - 6 Stunden gehen lassen, bis er luftig aussieht und mindestens auf die doppelte Gr\u00f6\u00dfe aufgegangen ist.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Den aktiven Sauerteig, Milch, Eier, Zucker und Salz zur R\u00fchrsch\u00fcssel einer K\u00fcchenmaschine hinzuf\u00fcgen und mixen, bis eine homogene Masse entsteht. Das Mehl hinzuf\u00fcgen und mit dem Knethaken bei niedriger Geschwindigkeit f\u00fcr ein paar Minuten kneten, bis ein grober Teig  entsteht. Die Schl\u00fcssel mit einem feuchten Geschirrtuch abdecken und etwa 20 - 25 Minuten ruhen lassen.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>W\u00e4hrend der Mixer auf niedriger Stufe l\u00e4uft, nach und nach die Butterw\u00fcrfel hinzuf\u00fcgen, bis sie vollst\u00e4ndig in den Teig eingearbeitet sind. Danach die Geschwindigkeit auf mittlere Stufe erh\u00f6hen und den Teig so lange kneten, bis er sich um den Knethaken schlingt und von den Seiten der Sch\u00fcssel l\u00f6st. Je nach Mixer kann das zwischen 10 - 20 Minuten dauern. Der Teig sollte nach dem Kneten weich, gl\u00e4nzend und elastisch sein und nicht mehr an den H\u00e4nden kleben bleiben. Eine Glassch\u00fcssel mit Butter ausstreichen und den Teig darin an einem warmen Ort f\u00fcr ca. 6 Stunden gehen lassen, bis er luftig ist und 50 % - 75 % an Volumen zugelegt hat.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>Kurz bevor der Teig ausgerollt wird, die Rosinen in einer kleinen Sch\u00fcssel mit hei\u00dfem Wasser (und optional einem Schuss Rum) bedecken und etwa 15 Minuten ziehen lassen, bis sie weich und saftig sind. Anschlie\u00dfend die Rosinen abseihen und eine Kastenform mit Backpapier auslegen. Den braunen Zucker mit dem Zimt vermengen und zur Seite stellen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 5<\/h5>\n\n\n\n<p>Den Teig auf eine leicht bemehlte Arbeitsfl\u00e4che st\u00fcrzen, zu einem Rechteck ausrollen (die kurze Seite sollte in etwa so lang wie die Kastenform sein) und mit drei Essl\u00f6ffel Milch bestreichen. Die Zimt-Zucker-Mischung sowie die Rosinen gleichm\u00e4\u00dfig darauf verteilen. Den Teig von der kurzen Seite zu einem Zylinder aufrollen und mit dem Schluss nach unten in die vorbereitete Kastenform legen. Mit Frischhaltefolie bedecken und \u00fcber Nacht im K\u00fchlschrank ruhen lassen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 6<\/h5>\n\n\n\n<p>Am n\u00e4chsten Morgen den Teig aus dem K\u00fchlschrank nehmen und bei warmer Zimmertemperatur fertig gehen lassen. Je nach Raumtemperatur kann das zwischen 2 bis 5 Stunden dauern. Der Teig sollte bis etwas \u00fcber den Rand der Kastenform aufgehen und weich und luftig aussehen.
