Es bringt au\u00dferdem Luft in den Teig und verbessert die Struktur und Konsistenz des Brotes. Beim Dehnen &amp; Falten wird der Teig gestrafft und entwickelt ein starkes Glutenger\u00fcst. Das f\u00f6rdert den Ofentrieb und tr\u00e4gt dazu bei, dass das Brot beim Backen gut aufgeht und eine lockere Krume erh\u00e4lt. Je nach Rezept und Teigbeschaffenheit gibt es verschiedene Methoden zum \"Dehnen &amp; Falten\", die in diesem Beitrag im Detail beschrieben werden.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"stretch-and-fold\">Die \"Stretch &amp; Fold\" Methode<\/h2>\n\n\n\n<p>Die \u201eStretch &amp; Fold\u201c Methode ist eine g\u00e4ngige und gebr\u00e4uchliche Technik, um den Teig ohne Kneten zu st\u00e4rken und dabei die n\u00f6tige Teigstruktur zu entwickeln. Bei dieser Methode wird der Teig zun\u00e4chst an einer Seite hochgehoben, gedehnt und dann \u00fcber sich selbst gefaltet. Diese Technik wird normalerweise kurz nach dem Mischen der Zutaten angewendet und ist eine einfache M\u00f6glichkeit, um einen groben und klebrigen Teig in einen glatten und elastischen Teig zu verwandeln. Das Dehnen &amp; Falten wird  w\u00e4hrend der Fermentation normalerweise mehrmals wiederholt und kann im Abstand von 15 Minuten bis zu einer Stunde erfolgen. Am Anfang f\u00fchlt sich der Teig meistens noch schlaff an, aber er wird mit der Zeit st\u00e4rker und elastischer. Die Anzahl der Wiederholungen h\u00e4ngt von der Teigstruktur ab. Bei dieser Methode wird der Teig in der Mitte angehoben und dann wie eine Spule eingerollt. Man kann allerdings auch einfache Brotteige laminieren und dadurch die Teigstruktur st\u00e4rken und die Elastizit\u00e4t f\u00f6rdern. Laminieren eignet sich auch besonders gut, wenn man Oliven oder \u00c4hnliches zum Brotteig hinzuf\u00fcgen m\u00f6chte. Bei dieser Methode wird der Teig m\u00f6glichst d\u00fcnn auf der Arbeitsfl\u00e4che ausgezogen und dann wieder zu einem kompakten Paket zusammengefaltet.<span
