Je einen Essl\u00f6ffel Butter und Oliven\u00f6l in einem gro\u00dfen Topf bei mittlerer Hitze erw\u00e4rmen. Das Gem\u00fcse darin 10 - 15 Minuten anschwitzen, bis es zart ist. Das bringt die Aromen und die nat\u00fcrliche S\u00fc\u00dfe zur Geltung. Anschlie\u00dfend das Gem\u00fcse aus dem Topf nehmen und in einer kleinen Sch\u00fcssel zur Seite stellen.&nbsp;<\/p>\n\n\n\n<p>Einen weiteren Essl\u00f6ffel Butter in den Topf geben und die Hitze erh\u00f6hen. Das Fleisch und den Pancetta von allen Seiten braun anbraten (ca. 10 - 15 Minuten). Das Gem\u00fcse wieder zum Topf hinzuf\u00fcgen, alles gut vermischen und ein paar weitere Minuten braten. Dann den Wei\u00dfwein hinzuf\u00fcgen und den Bratensatz vom Boden l\u00f6sen. Anschlie\u00dfend die passierten und die gew\u00fcrfelten Tomaten sowie das Wasser hinzugeben. Gut durchr\u00fchren und mit Salz und Pfeffer abschmecken.&nbsp;<em><strong>Tipp:<\/strong><\/em> Die Sauce sollte wirklich gut gesalzen sein, da die frischen Lasagnebl\u00e4ttern kein Salz enthalten. Die Zugabe von etwas mehr Salz in der Sauce gleicht das aus und sorgt f\u00fcr einen abgerundeten Geschmack im fertigen Gericht. Das Rag\u00f9 mit geschlossenem Deckel f\u00fcr etwa 3 - 4 Stunden bei minimaler Hitze k\u00f6cheln lassen und dabei gelegentlich umr\u00fchren. \u2028&nbsp;<\/p>\n\n\n\n<p>Gegen Ende der Kochzeit langsam die Milch einr\u00fchren und die Sauce zum Schluss ohne Deckel noch etwa 10 - 15 Minuten k\u00f6cheln lassen. Das Rag\u00f9 sollte am Ende eine reichhaltige, cremige Konsistenz haben. Noch einmal abschmecken und bei Bedarf nachw\u00fcrzen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p><strong>Zubereitung der&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/fresh-pasta-sheets\/\">frischen Lasagnebl\u00e4ttern<\/a>:<\/strong><br>Das Grundrezept f\u00fcr&nbsp;<a href=\"https:\/\/notjustfood.blog\/de\/italian-pasta-dough-recipe\/\">Pastateig zubereiten:<\/a>Das Mehl auf die Arbeitsfl\u00e4che h\u00e4ufen und eine Mulde darin formen. Die Eier in die Mulde schlagen und mit einer Gabel vorsichtig verr\u00fchren. Nach und nach mehr Mehl von den R\u00e4ndern hinzuf\u00fcgen, bis in der Mitte eine dickfl\u00fcssige Masse entsteht. Anschlie\u00dfend mit einer Teigkarte das restliche Mehl unterheben und gleichm\u00e4\u00dfig einarbeiten, bis ein grober Teig entsteht. Den Teig etwa 10 Minuten lang kneten, bis er sich glatt und geschmeidig anf\u00fchlt. In Frischhaltefolie einwickeln und mindestens 30 Minuten bei Raumtemperatur ruhen lassen.<\/p>\n\n\n\n<p>Ca. ein Viertel des Teiges abschneiden und den Rest in Folie eingewickelt lassen. Das Teigst\u00fcck mit einer Pastamaschine zu einer d\u00fcnnen Teigplatte ausrollen (bis Stufe 7 auf der Marcato Atlas 150). Die Teigplatte dann in  Rechtecke mit der passenden Gr\u00f6\u00dfe f\u00fcr die Auflaufform zuschneiden.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p><strong>Die B\u00e9chamelsauce zubereiten:<\/strong>&nbsp;<br>Die Butter in einem Topf bei mittlerer Hitze schmelzen lassen. Mit einem Schneebesen das Mehl einr\u00fchren und etwa 2 - 3 Minuten anschwitzen, aber darauf achten, dass es nicht braun wird. Den Topf vom Herd nehmen und nach und nach langsam die warme Milch unter konstantem R\u00fchren hinzuf\u00fcgen, damit keine Klumpen entstehen. (Man kann zwar auch kalte Milch direkt aus dem K\u00fchlschrank verwenden, aber es dauert dann l\u00e4nger, bis die Sauce k\u00f6chelt und eindickt). Sobald die gesamte Milch einger\u00fchrt ist, alles mit Salz, Pfeffer und einer Prise Muskat abschmecken. Die Sauce bei mittlerer Hitze unter R\u00fchren zum K\u00f6cheln bringen. Einen Deckel auflegen, die Temperatur reduzieren und auf niedriger Hitze etwa 10 - 15 Minuten k\u00f6cheln lassen, bis die Sauce eingedickt ist und eine cremige Konsistenz hat.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p><strong>Die Lasagne schichten:<\/strong>&nbsp;<br>Sobald alle Zutaten bereit sind, kann man die Lasagne schichten. Zuerst eine d\u00fcnne Schicht Rag\u00f9 am Boden der Auflaufform verteilen. Dann folgt die erste Schicht der Nudelbl\u00e4tter. Eine weitere Schicht Rag\u00f9 dar\u00fcber verteilen, dann die B\u00e9chamelsauce und ein wenig geriebenen Parmesan. Die Zutaten in der gleichen Reihenfolge weiter schichten. Den Abschluss macht eine dicke Schicht B\u00e9chamelsauce, bestreut mit Mozzarella und Parmesan.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 5<\/h5>\n\n\n\n<p><strong>Die Lasagne \u00fcberbacken:<\/strong><br>Den Ofen auf 200 \u00b0 C vorheizen. Die Lasagne f\u00fcr 20 Minuten mit Alufolie bedeckt backen. Das sorgt daf\u00fcr, dass die Fl\u00fcssigkeit in der Sauce nicht zu schnell verdampft und die Pasta gar wird. Danach die Folie entfernen und weitere 20 Minuten knusprig und goldbraun \u00fcberbacken. F\u00fcr ein extra knuspriges Ergebnis kann man w\u00e4hrend der letzten paar Minuten die Grillfunktion des Ofens einschalten.&nbsp;<\/p>\n\n\n\n<p>Die Lasagne aus dem Ofen nehmen und mindestens 20 Minuten rasten und ausk\u00fchlen lassen, bevor man sie anschneidet. Dadurch setzen sich die Schichten ein wenig.
