Alles gut vermengen, bis ein grober Teig entsteht. Den Teig am besten kurz kneten, bis das Mehl vollst\u00e4ndig eingearbeitet ist und keine trockenen Stellen mehr \u00fcbrig sind. Den Sauerteig in einem Schraubglas bei Zimmertemperatur \u00fcber Nacht gehen lassen. Am n\u00e4chsten Morgen sollte er luftig sein und mindestens auf die doppelte (oder dreifache) Gr\u00f6\u00dfe aufgegangen sein.<span class=\"Apple-converted-space\">&nbsp;<\/span><\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>In einer R\u00fchrsch\u00fcssel den aktiven Weizensauerteig in lauwarmem Wasser aufl\u00f6sen und die beiden Mehlsorten hinzuf\u00fcgen. Mit einem Teigbesen vermischen, bis ein grober Teig entsteht. Die Sch\u00fcssel mit einem feuchten Geschirrtuch abdecken und den Teig eine halbe Stunde ruhen lassen.<span class=\"Apple-converted-space\">&nbsp;<\/span><\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Das Salz und das Oliven\u00f6l hinzuf\u00fcgen und mit nassen H\u00e4nden einarbeiten, bis ein homogener Teig entsteht. <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#slap-and-fold\" title=\"\">Den Teig dehnen &amp; falten,<\/a> um das Glutenger\u00fcst zu st\u00e4rken und den Teig glatt und elastisch zu machen. Den Teig anschlie\u00dfend in eine leicht ge\u00f6lte Sch\u00fcssel legen und an einem warmen Ort ( 25 \u00b0 C - 28\u00b0 C) f\u00fcr etwa 4 Stunden gehen lassen.<span class=\"Apple-converted-space\">&nbsp;<\/span><\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>W\u00e4hrend der Teig geht, wird er noch viermal <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#coil-fold\" title=\"gedehnt und gefaltet.\">gedehnt und gefaltet.<\/a> Man beginnt damit 30 Minuten nachdem man den Teig gemixt hat und wiederholt den Vorgang alle 30 Minuten. Das st\u00e4rkt den Teig und sorgt daf\u00fcr, dass er genug Struktur hat und beim Backen gut aufgeht. Nach dem letzten \u201eCoil Fold\u201c sollte der Teig noch etwa 2 Stunden gehen, bis er luftig aussieht und sichtbar an Volumen (50 % - 75 %) zugelegt hat.<span class=\"Apple-converted-space\">&nbsp;<\/span><\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 5<\/h5>\n\n\n\n<p>Sobald der Teig locker und luftig aussieht, eine Backform mit Backpapier auslegen und mit einer d\u00fcnnen Schicht Oliven\u00f6l bestreichen. Den Teig in die Form geben und vorsichtig auseinanderziehen, bis er den Boden der Form vollst\u00e4ndig bedeckt. Die Form mit Frischhaltefolie abdecken und noch etwa 1.5 Stunden an einem warmen Ort gehen lassen. Den Ofen w\u00e4hrend der letzten 30 Minuten auf 230\u00b0 C vorheizen.<span class=\"Apple-converted-space\">&nbsp;<\/span><\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 6<\/h5>\n\n\n\n<p>Vor dem Backen den Teig gleichm\u00e4\u00dfig mit dem Oliven\u00f6l bestreichen. Mit nassen Fingerspitzen die charakteristischen Dellen in den Teig dr\u00fccken. Mit dem gehackten Rosmarin bestreuen und mit den Cherrytomaten belegen.
