einr\u00fchren. Alles gut vermengen, bis ein grober Teig entsteht. Den Teig am besten kurz kneten, bis das Mehl vollst\u00e4ndig eingearbeitet ist und keine trockenen Stellen mehr \u00fcbrig sind. Den Sauerteig in einem Schraubglas bei Zimmertemperatur \u00fcber Nacht gehen lassen. Am n\u00e4chsten Morgen sollte er luftig sein und mindestens auf die doppelte (oder dreifache) Gr\u00f6\u00dfe aufgegangen sein.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Am n\u00e4chsten Morgen <strong>den Hauptteig zubereiten<\/strong>: In einer R\u00fchrsch\u00fcssel den aktiven Weizensauerteig im lauwarmen Wasser aufl\u00f6sen und die beiden Mehlsorten hinzuf\u00fcgen. Mit einem Teigbesen vermischen, bis ein grober Teig entsteht. Die Sch\u00fcssel mit einem feuchten Geschirrtuch abdecken und den Teig eine halbe Stunde ruhen lassen.\u2028&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Dann das Salz hinzuf\u00fcgen und mit nassen H\u00e4nden in den Teig einarbeiten. <a href=\"https:\/\/notjustfood.blog\/de\/how-to-stretch-and-fold-sourdough\/#slap-and-fold\" title=\"\">Den Teig dehnen &amp; falten,<\/a> um das Glutenger\u00fcst zu st\u00e4rken und den Teig glatt und elastisch zu machen. Den Teig anschlie\u00dfend in eine leicht ge\u00f6lte Sch\u00fcssel legen und an einem warmen Ort (25 \u00b0 C - 28\u00b0C) f\u00fcr etwa 4 Stunden gehen lassen.<span class=\"Apple-converted-space\">&nbsp;<\/span><\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p><strong>Die Knoblauchpaste zubereiten:<\/strong>Den Ofen (ein kleiner Toaster Ofen eignet sich daf\u00fcr besonders gut) auf 200\u00b0C vorheizen. Die \u00e4u\u00dferen losen Schichten einer Knoblauchknolle entfernen und mit einem scharfen Messer den obersten Teil der Knolle abschneiden. Darauf achten, dass die Knolle intakt bleibt und nicht zerf\u00e4llt. \nDie Knolle auf St\u00fcck Alufolie legen, mit etwas Oliven\u00f6l betr\u00e4ufeln und eine Prise Salz hinzuf\u00fcgen. Anschlie\u00dfend die Folie um den Knoblauch wickeln und ein kleines P\u00e4ckchen formen. Den Knoblauch in den vorgeheizten Ofen geben und ca. 30 Minuten r\u00f6sten, bis die Knoblauchzehen weich und karamellisiert sind. Das P\u00e4ckchen aus dem Ofen nehmen und ca. 15 - 20 ausk\u00fchlen lassen. Die Knolle auswickeln und einzelnen Knoblauchzehen mit den Fingern in eine kleine Sch\u00fcssel dr\u00fccken. Der Knoblauch sollte ganz weich sein und sich m\u00fchelos von den Schalen l\u00f6sen. Einen Essl\u00f6ffel Oliven\u00f6l hinzuf\u00fcgen und mit einer Gabel alles zu einer cremigen Paste vermischen. Mit Frischhaltefolie bedecken und zur Seite stellen.&nbsp;<\/p>\n\n\n<style>.wp-block-kadence-advancedgallery Man beginnt damit 30 Minuten nachdem man den Teig gemixt hat und wiederholt den Vorgang noch zweimal in 30 Minuten Intervallen. Das st\u00e4rkt den Teig und sorgt daf\u00fcr, dass er genug Struktur hat und beim Backen gut aufgeht.<span class=\"Apple-converted-space\">&nbsp;<\/span><\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 6<\/h5>\n\n\n\n<p>Nach dem letzen \u201eCoil Fold\u201c den Teig 30 Minuten ruhen lassen. Dann wird er laminiert: Die Arbeitsfl\u00e4che mit Wasser bespr\u00fchen und den Teig so d\u00fcnn wie m\u00f6glich ausziehen, aber darauf achten, dass er nicht rei\u00dft. Die Knoblauchpaste und den Rosmarin gleichm\u00e4\u00dfig darauf verteilen und anschlie\u00dfend den Teig wieder zu einem kompakten Paket zusammenfalten. Den Teig noch ca. 1.5 Stunden gehen lassen, bis er luftig und gelockert aussieht.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 7<\/h5>\n\n\n\n<p>Sobald der Teig sein Volumen vergr\u00f6\u00dfert hat und luftig aussieht, kann er geformt werden. Den Teig zuerst auf die Arbeitsfl\u00e4che st\u00fcrzen und zu einem <a href=\"https:\/\/notjustfood.blog\/de\/how-to-shape-sourdough\/#pre-shape\">runden Teigling formen<\/a> 30 Minuten rasten lassen, dann mithilfe einer Teigkarte den Teigling wieder umdrehen (mit dem Schluss nach oben) und zu einem <a href=\"https:\/\/notjustfood.blog\/de\/how-to-shape-sourdough\/#boule\">runden Laib formen.<\/a>Mit dem Schluss nach oben in ein bemehltes G\u00e4rk\u00f6rbchen legen und \u00fcber Nacht im K\u00fchlschrank gehen lassen. Die lange, kalte Teigruhe sorgt f\u00fcr extra Geschmack und Aroma.<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 8<\/h5>\n\n\n\n<p>Am n\u00e4chsten Tag den Ofen auf 230\u00b0C vorheizen. Den Teig aus dem G\u00e4rk\u00f6rbchen auf ein St\u00fcck Backpapier st\u00fcrzen und mit einem B\u00e4ckermesser an der Oberfl\u00e4che einschneiden. W\u00e4hrend der ersten 10 Minuten das Brot mit Dampf backen. Dann kurz die Ofent\u00fcre \u00f6ffnen und den Dampf ablassen. F\u00fcr weitere 20 - 25 Minuten fertig backen, bis die Kruste goldbraun ist und die Kerntemperatur mindestens 93\u00b0C betr\u00e4gt. Man kann auch mit der Klopfprobe testen, ob das Brot durch ist: Wenn man mit dem Finger auf die Unterseite des Brotes klopft, sollte es hohl klingen. Das Brot vor dem Anscheiden bei Raumtemperatur vollst\u00e4ndig ausk\u00fchlen lassen. Das verbessert die Struktur des Brotes. Wenn man es zu fr\u00fch anschneidet, kann die Krume noch gummiartig und teigig sein. Den Knoblauch dann in den vorgeheizten Ofen geben und ca. 30 Minuten r\u00f6sten, bis die Knoblauchzehen weich und karamellisiert sind. Das P\u00e4ckchen aus dem Ofen nehmen und ca. 15 - 20 ausk\u00fchlen lassen. Die Knolle auswickeln und einzelnen Knoblauchzehen mit den Fingern in eine kleine Sch\u00fcssel dr\u00fccken. Der Knoblauch sollte ganz weich sein und sich m\u00fchelos von den Schalen l\u00f6sen. Einen Essl\u00f6ffel Oliven\u00f6l hinzuf\u00fcgen und mit einer Gabel alles zu einer cremigen Paste vermischen. Man beginnt damit 30 Minuten nachdem man den Teig gemixt hat und wiederholt den Vorgang dann noch zweimal in 30 Minuten Intervallen. Das st\u00e4rkt den Teig und sorgt daf\u00fcr, dass er genug Struktur hat und beim Backen gut aufgeht.<\/div><\/li><li id=\"wprm-recipe-4005-step-1-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Nach dem letzen \u201eCoil Fold\u201c den Teig 30 Minuten ruhen lassen. Dann wird er laminiert: Die Arbeitsfl\u00e4che mit Wasser bespr\u00fchen und den Teig so d\u00fcnn wie m\u00f6glich ausziehen, aber darauf achten, dass er nicht rei\u00dft. Die Knoblauchpaste und den Rosmarin gleichm\u00e4\u00dfig darauf verteilen und anschlie\u00dfend den Teig wieder zu einem kompakten Paket zusammenfalten. Das G\u00e4rk\u00f6rbchen abdecken und \u00fcber Nacht im K\u00fchlschrank gehen lassen.
