has-theme-palette-2-color has-text-color\">Schritt 1<\/h5>\n\n\n\n<p><strong>Den Oktopus vorbereiten:<\/strong> Gefrorenen Oktopus mindestens 24 Stunden im K\u00fchlschrank vollst\u00e4ndig auftauen lassen. Bei Fischh\u00e4ndlern bekommt man den Oktopus normalerweise schon k\u00fcchenfertig und ausgenommen. Man muss zuhause mit einem scharfen Messer nur noch den \u201eSchnabel\u201c (den harten Teil in der Mitte des Oktopus) und die Augen entfernen. Den Oktopus vor der Zubereitung gr\u00fcndlich unter kaltem, flie\u00dfendem Wasser reinigen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p><strong>Die Gem\u00fcsebr\u00fche aufsetzen:<\/strong> Die Karotten in kleinere St\u00fccke scheiden und die Knoblauchzehen sch\u00e4len. Etwas Oliven\u00f6l bei mittlerer Hitze in einem gro\u00dfen Topf erw\u00e4rmen. Eine rote Zwiebel halbieren und zusammen mit den Karotten und dem Knoblauch in den Topf geben. Einige Minuten anschwitzen und anschlie\u00dfend mit dem Wein abl\u00f6schen. Den Topf mit Wasser auff\u00fcllen und Petersilie, Salz und Essig hinzuf\u00fcgen. Den Vorgang ein paarmal wiederholen und anschlie\u00dfend den ganzen Oktopus ins Wasser tauchen. Durch das Blanchieren kr\u00e4useln sich die Tentakel und das Fleisch wird zarter. Den Topf abdecken und den Oktopus bei niedriger Hitze etwa eine Stunde lang leicht k\u00f6cheln lassen, bis er zart ist. Das Fleisch sollte weich sein, aber noch etwas Biss haben. Sobald er fertig ist, aus dem Wasser heben, kurz ausk\u00fchlen lassen und anschlie\u00dfend in mundgerechte St\u00fccke schneiden.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p><strong>Die Pasta vorbereiten:<\/strong> W\u00e4hrend der Oktopus kocht, <a href=\"https:\/\/notjustfood.blog\/de\/squid-ink-pasta\/\">das Grundrezept f\u00fcr schwarzen Nudelteig zubereiten.<\/a>Das Mehl auf die Arbeitsfl\u00e4che h\u00e4ufen und in der Mitte eine Mulde formen. Die Eier in der Mulde schlagen und die Tintenfischtinte hinzuf\u00fcgen. Die Eier und die Tinte mit einer Gabel verr\u00fchren. Nach und nach mehr Mehl von den R\u00e4ndern einr\u00fchren, bis in der Mitte eine dickfl\u00fcssige Paste entsteht. Mit einer Teigkarte das restliche Mehl unterheben und alles zu einem groben Teig vermengen. Den Teig etwa 10 Minuten lang mit den H\u00e4nden kneten, bis er glatt und geschmeidig ist. In Frischhaltefolie einwickeln und 30 Minuten bei Zimmertemperatur ruhen lassen.<\/p>\n\n\n\n<p>Ein Viertel vom Teig abschneiden und den Rest in Folie eingewickelt lassen. Mit einer Pastamaschine den Teig zu einer <a href=\"https:\/\/notjustfood.blog\/de\/fresh-pasta-sheets\/\">d\u00fcnnen Teigplatte ausrollen<\/a>(bis Stufe 5 mit der Marcato Atlas Pastamaschine) und mit dem Tagliolini-Aufsatz in d\u00fcnne Bandnudeln schneiden (\u00e4hnlich wie Spaghetti). Die gew\u00fcrfelten Tomaten und die gehackte Petersilie hinzuf\u00fcgen. Mit Salz, Pfeffer und Chili abschmecken.
