Anschlie\u00dfend das Mehl vollst\u00e4ndig einr\u00fchren, bis eine feste, kompakte Masse entsteht. Das Glas mit einem Deckel abdecken und den Sauerteig \u00fcber Nacht bei Raumtemperatur mindestens auf die doppelte Gr\u00f6\u00dfe aufgehen lassen. Am n\u00e4chsten Morgen sollte der Sauerteig aktiv und luftig aussehen und ein angenehm mildes und leicht s\u00fc\u00dfliches Aroma haben.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Am n\u00e4chsten Morgen den Hauptteig zubereiten: Den aktiven Sauerteig, Milch, Zucker und Ei in die R\u00fchrsch\u00fcssel einer K\u00fcchenmaschine geben. Mit dem Flachr\u00fchrer bei mittlerer bis hoher Geschwindigkeit mixen, bis eine homogene Masse entsteht. Anschlie\u00dfend zum Knethaken wechseln und das Mehl bei niedriger Geschwindigkeit f\u00fcr ca. 2 Minuten einr\u00fchren, bis ein grober Teig entsteht. Die Sch\u00fcssel mit einem feuchten Geschirrtuch abdecken und den Teig f\u00fcr ca. 30 Minuten ruhen lassen. In der Zwischenzeit die Butter in kleine W\u00fcrfel schneiden und bei Zimmertemperatur weich werden lassen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Das Salz hinzuf\u00fcgen und den Teig bei niedriger Geschwindigkeit f\u00fcr etwa 5 - 10 Minuten kneten, bis er glatt und elastisch wird. Anschlie\u00dfend (w\u00e4hrend der Mixer l\u00e4uft) nach und nach die weichen Butterw\u00fcrfel hinzuf\u00fcgen. Sobald die Butter vollst\u00e4ndig eingearbeitet ist, die Geschwindigkeit auf mittlere Stufe erh\u00f6hen und den Teig so lange kneten, bis er sich komplett von den Seiten der R\u00fchrsch\u00fcssel l\u00f6st. Je nach Mixer kann das ca. 10 - 20 Minuten dauern. Der Teig ist ausgiebig geknetet, wenn er sich glatt und geschmeidig anf\u00fchlt und nicht mehr klebrig ist.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>Den Teig zu einer glatten Kugel formen und f\u00fcr die Fermentation in eine leicht ge\u00f6lte Sch\u00fcssel geben. Mit Frischhaltefolie oder einem feuchten Geschirrtuch abdecken und an einem warmen Ort (26 - 28\u00b0 C) f\u00fcr etwa 6 Stunden gehen lassen. Der Teig muss w\u00e4hrenddessen nicht auf die doppelte Gr\u00f6\u00dfe aufgehen, aber er sollte luftiger aussehen (viele kleine Luftbl\u00e4schen im Teig) als zu Beginn der Fermentation. Die Teigst\u00fccke auf einer sauberen Arbeitsfl\u00e4che zu langen Str\u00e4ngen ausrollen und anschlie\u00dfend zu einem Zopf flechten. Die Teigst\u00fccke zuerst mit einem Nudelholz flach ausrollen und dann zu Zylindern aufrollen (siehe Video unten). Mit einem feuchten Geschirrtuch bedecken und ca. 30 Minuten ruhen lassen. Die Teigst\u00fccke auf einer sauberen Arbeitsfl\u00e4che zu langen Str\u00e4ngen ausrollen und anschlie\u00dfend zu einem Zopf flechten. Ein Ei verquirlen und den Teig damit bestreichen. Den Zopf f\u00fcr 25 - 30 Minuten goldbraun backen (oder bis die Kerntemperatur 93\u00b0 C betr\u00e4gt). Falls die Oberfl\u00e4che zu schnell dunkel wird, den Zopf locker mit Alufolie bedecken und fertig backen.
