Den Ricotta darin ca. 30 Minuten abtropfen lassen, um \u00fcbersch\u00fcssige Feuchtigkeit zu entfernen.\u00a0&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>In einer R\u00fchrsch\u00fcssel den abgetropften Ricotta, das Hartweizenmehl, die Eier und den geriebenen Parmesan zu einer cremigen Masse verr\u00fchren.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p>Das Universalmehl auf die Arbeitsfl\u00e4che kippen und in der Mitte eine kleine Mulde formen. Die Ricotta-Masse in die Mitte geben und mit einer Teigkarte nach und nach das Mehl unterheben, bis ein grober Teig entsteht. Die Arbeitsfl\u00e4che und den Teig mit etwas Hartweizenmehl best\u00e4uben und die Masse mit den H\u00e4nden f\u00fcr ein paar Minuten zu einem homogen Teig verkneten. Der Teig sollte nur so lange geknetet werden, bis sich alle Zutaten gleichm\u00e4\u00dfig miteinander verbinden. Zu langes Kneten macht den Teig z\u00e4h und klebrig.\u00a0\nDen Teig anschlie\u00dfend mit einer umgedrehten Sch\u00fcssel bedecken und bei Raumtemperatur f\u00fcr etwa 45 Minuten ruhen lassen. Die Teigruhe sorgt daf\u00fcr, dass das Mehl die Feuchtigkeit vollst\u00e4ndig aufnehmen kann und macht den Teig geschmeidiger und leichter zu handhaben. <\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p>Den Teig mit einer Teigkarte in acht gleichm\u00e4\u00dfige St\u00fccke teilen. Die Teigst\u00fccke zu langen Str\u00e4ngen ausrollen und anschlie\u00dfend mit einer Teigkarte in kleine St\u00fccke teilen. Die Gnocchi k\u00f6nnen je nach Belieben gr\u00f6\u00dfer oder kleiner geformt werden, sind aber im Durchschnitt ca. 2 - 3 cm breit.
