Die Masse anschlie\u00dfend auf die Arbeitsfl\u00e4che kippen und mit den H\u00e4nden f\u00fcr ein paar Minuten kneten, bis sich die Zutaten verbinden und ein grober Teig entsteht. Den Teig in Frischhaltefolie einwickeln und f\u00fcr 10 Minuten ruhen lassen. Das sorgt daf\u00fcr, dass das Mehl die Fl\u00fcssigkeit vollst\u00e4ndig aufnehmen kann und macht den Teig weicher und leichter zu kneten. Nach der ersten Teigruhe den Teig f\u00fcr weitere 5 - 7 Minuten kneten, bis er sich glatt und elastisch anf\u00fchlt. Anschlie\u00dfend wieder luftdicht in Folie einwickeln und f\u00fcr mindestens eine Stunde bei Zimmertemperatur ruhen lassen, damit sich das Glutenger\u00fcst entspannt und man den Teig anschlie\u00dfend leichter formen kann.\u00a0&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p>Ein Viertel des Teiges abschneiden und den Rest in Folie eingewickelt lassen, damit er nicht austrocknet. Das Teigst\u00fcck mit einem Nudelholz ausrollen und anschlie\u00dfend in Streifen schneiden (ca. 1 - 2 cm breit). Die Streifen zu langen Str\u00e4ngen ausrollen, so als w\u00fcrde man <a href=\"https:\/\/notjustfood.blog\/de\/how-to-make-pici-pasta\/\" title=\"\">Pici Pasta ca. 7 - 10 cm lange St\u00fccke teilen. Ein Teigst\u00fcck vertikal vor sich auf die Arbeitsfl\u00e4che legen und den Holzspie\u00df diagonal dazu platzieren. Zuerst die Spitze des Nudelstrangs um den Spie\u00df wickeln und dann den restlichen Teig aufrollen, indem man den Spie\u00df vorsichtig mit einer Hand zu sich hinrollt. Sobald der Teig vollst\u00e4ndig um den Stab gewickelt ist, mit der Handfl\u00e4che kurz auf der Arbeitsfl\u00e4che hin und her rollen und die Pasta dann vorsichtig vom Spie\u00df schieben.
