Die Eier in die Mulde geben und mit einer Gabel die Dotter aufbrechen. Dann vorsichtig die Eier und das Mehl in der Mitte vermischen und nach und nach immer mehr Mehl von den R\u00e4ndern einarbeiten, bis in der Mitte eine dickfl\u00fcssige Masse entsteht. Anschlie\u00dfend mit einer Teigkarte das restliche Mehl unterheben und einarbeiten, bis ein grober Teig entsteht. Alles mit den H\u00e4nden vermengen und den Teig f\u00fcr ca. 10 Minuten kneten, bis er sich glatt und elastisch anf\u00fchlt. Anschlie\u00dfend den Teig jeweils einmal durch jede weitere Einstellung der Maschine rollen, bis man bei Stufe 6 ankommt. Den Teig auf der letzten Stufe doppelt durchrollen. Das Nudelblatt dann auf beiden Seiten leicht mit Hartweizengrie\u00df best\u00e4uben und flach auf ein bemehltes Backblech legen. Den Vorgang mit dem restlichen Teig wiederholen.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p><strong>Die Bandnudeln schneiden:<\/strong> Den Tagliatelle-Aufsatz an der Nudelmaschine anbringen und die Teigbl\u00e4tter durch den Aufsatz rollen, um die Pasta zu schneiden. Falls man die Tagliatelle von Hand schneiden m\u00f6chten, rollt man die Nudelbl\u00e4tter locker zu einer flachen Rolle auf und schneidet sie dann in d\u00fcnne Streifen (ungef\u00e4hr 6 mm breit). Die Bandnudeln anschlie\u00dfend auseinanderfalten und mit etwas Hartweizenmehl best\u00e4uben, damit die Pasta nicht zusammenklebt. Die Tagliatelle zu Nudelnestern drehen und auf einem bemehlten Backblech auslegen. Man kann die Pasta entweder sofort kochen oder sie auf dem Blech (locker mit Frischhaltefolie bedeckt) bis zu zwei Stunden bei Raumtemperatur lagern. F\u00fcr eine l\u00e4ngere Haltbarmachung kann man die Nester zuerst f\u00fcr ein paar Stunden auf dem Blech einfrieren und anschlie\u00dfend in einen Gefrierbeutel umf\u00fcllen.
