Sobald das \u00d6l hei\u00df ist, das Gem\u00fcse und das Tomatenmark hinzuf\u00fcgen und etwa 10 Minuten lang braten, bis das Gem\u00fcse weich ist. Dabei gelegentlich umr\u00fchren.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2<\/h5>\n\n\n\n<p><strong>Das Fleisch braten:<\/strong> Die Pancetta und das Rindfleisch in den Topf geben und bei hoher Hitze anbraten. Das Fleisch mit einem Kochl\u00f6ffel zerkleinern und etwa 10 Minuten lang kochen, bis es auf allen Seiten gleichm\u00e4\u00dfig gebr\u00e4unt ist. Das Gem\u00fcse zur\u00fcck in den Topf geben und mit dem Fleisch noch ein paar Minuten mitbraten. Anschlie\u00dfend die Pfanne mit Wein abl\u00f6schen und dabei den Bratensatz vom Boden l\u00f6sen. Solange k\u00f6cheln lassen, bis der Wein fast vollst\u00e4ndig reduziert ist.&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 3<\/h5>\n\n\n\n<p><strong>Die Passata und die Br\u00fche hinzuf\u00fcgen<\/strong> und das Rag\u00f9 mit Salz und Pfeffer w\u00fcrzen. Die Hitze reduzieren und das Rag\u00f9 bei niedriger Temperatur mit einem Deckel etwa 4 Stunden lang sanft k\u00f6cheln lassen und gelegentlich umr\u00fchren. Durch das langsame und schonende Kochen wird das Rag\u00f9 besonders aromatisch. Falls w\u00e4hrend des Kochvorgangs zu viel Fl\u00fcssigkeit verdampft und das Rag\u00f9 zu dickfl\u00fcssig wird, kann man je nach Bedarf noch etwas mehr Br\u00fche oder Wasser hinzuf\u00fcgen. Gegen Ende der Kochzeit die Milch einr\u00fchren und das Rag\u00f9 ohne Deckel noch weitere 15\u201320 Minuten k\u00f6cheln lassen. Anschlie\u00dfend abschmecken und gegebenenfalls noch etwas nachw\u00fcrzen.\u00a0&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4<\/h5>\n\n\n\n<p><strong>Die Pasta kochen:<\/strong> Wasser in einem gro\u00dfen Topf zum Kochen bringen und reichlich salzen. Die Tagliatelle im kochenden Wasser \u201eal dente\u201c kochen. Bei frischer Pasta dauert das in etwa 2 Minuten. Getrocknete Pasta je nach Packungsanweisungen zubereiten. Die Pasta mit einem Schauml\u00f6ffel oder einer Nudelzange abseihen und direkt in die Pfanne zum Rag\u00f9 geben. Alles gut vermengen, bis die Tagliatelle gleichm\u00e4\u00dfig mit dem Rag\u00f9 \u00fcberzogen sind.
