Den Vorteig an einem warmen Ort (idealerweise zwischen 26 \u00b0C und 29 \u00b0C) etwa 4\u20136 Stunden lang gehen lassen, bis sich sein Volumen verdoppelt (oder verdreifacht) hat. Er ist bereit zur Weiterverwendung, wenn er luftig aussieht und einen mildes, joghurt\u00e4hnliches Aroma hat. Bitte beachte, dass die tats\u00e4chliche Zeit, die der Teig zum Aufgehen ben\u00f6tigt, je nach Raumtemperatur variieren kann. In einer k\u00fchleren Umgebung muss der Teig l\u00e4nger gehen.
