Anschlie\u00dfend das Mehl einr\u00fchren. Um sicherzustellen, dass das Mehl vollst\u00e4ndig eingearbeitet ist, kann man den Vorteig kurz auf der Arbeitsfl\u00e4che kneten, bis er sich glatt und elastisch anf\u00fchlt. Anschlie\u00dfend den Teig wieder ins Glas legen und locker mit einem Deckel abdecken. Den Vorteig an einem warmen Ort (idealerweise zwischen 26 \u00b0C und 29 \u00b0C) etwa 4 Stunden lang gehen lassen, bis sich sein Volumen verdoppelt (oder verdreifacht) hat. Er ist bereit zur Weiterverwendung, wenn er luftig aussieht und einen mildes, joghurt\u00e4hnliches Aroma hat. Bitte beachte, dass die tats\u00e4chliche Dauer, die der Teig zum Aufgehen ben\u00f6tigt, je nach Raumtemperatur variieren kann. In einer k\u00fchleren Umgebung muss der Teig l\u00e4nger gehen. Anschlie\u00dfend das Mehl und das Salz hinzuf\u00fcgen. Die Zutaten mit einem Teigbesen vermengen, bis ein grober Teig entsteht. Der Teig muss im Gegensatz zu Weizenteigen nicht ausgiebig geknetet werden. Man sollte nur darauf achten, dass das Mehl vollst\u00e4ndig eingearbeitet ist und keine trockenen Stellen \u00fcbrig bleiben. Anschlie\u00dfend den Teig in eine saubere, leicht ge\u00f6lte Sch\u00fcssel geben. W\u00e4hrend der Fermentation sollte die Teigtemperatur und die Umgebungstemperatur zwischen 25 \u00b0C und 27 \u00b0C betragen. Da Roggenteig dazu neigt, recht klebrig und nicht sehr elastisch zu sein, muss man beim Formen nicht so sehr drauf achten, gen\u00fcgend Teigspannung aufzubauen, wie man es normalerweise bei Weizenbroten machen w\u00fcrde. Es reicht, den Teig so gut es geht in eine runde Form zu bringen. Den Teig anschlie\u00dfend mit dem Schluss nach oben in einen rundes, bemehltes G\u00e4rk\u00f6rbchen legen und mit Frischhaltefolie abdecken.
