Das Gesamtgewicht der Eier sollte in etwa 57% der gesamten Mehlmenge ausmachen. Da Eier aber in Gr\u00f6\u00dfe und Gewicht variieren, erzielt man bessere Ergebnisse, wenn man sie vor der Zubereitung abwiegt und die ben\u00f6tige Mehlmenge entsprechend berechnet.<\/p>\n\n\n\n<p><em><strong>Beispiel:<\/strong>&nbsp;Wenn das Gewicht von 4 Eiern 228 g betr\u00e4gt, ben\u00f6tigt man f\u00fcr den Teig genau 400 g Mehl (228 g \/ 0.57 = 400 g). Verwendet man aber gr\u00f6\u00dfere oder kleinere Eier, muss die Mehlmenge entsprechend angepasst das Mehl auf die Arbeitsfl\u00e4che kippen. Darin eine kleine Mulde f\u00fcr die Eier formen. Dazu den Teig in der H\u00e4lfte falten und anschlie\u00dfend die obere H\u00e4lfte mit dem Handballen von sich wegdr\u00fccken. Den Teig um 90 Grad drehen, wieder falten, mit dem Ballen wegdr\u00fccken und wiederholen. Das Kneten gleicht einer wellenartigen Bewegung. Man findet dabei schnell seinen eigenen Rhythmus. Nach dem Kneten sollte sich der Teig glatt und geschmeidig anf\u00fchlen und weder klebrig noch kr\u00fcmelig sein. Den Teig in Frischhaltefolie einwickeln und mindestens 30 Minuten bei Zimmertemperatur rasten lassen.<\/p>\n\n\n<style>.wp-block-kadence-advancedgallery Pastamaschine d\u00fcnn ausrollen und die gew\u00fcnschte Pasta-Sorte formen. Sollte man den Teig nicht direkt weiterverarbeiten, kann man ihn in Frischhaltefolie eingewickelt bis zu 48 Stunden im K\u00fchlschrank lagern. Den Teig vor der Zubereitung der Pasta wieder auf Zimmertemperatur bringen. Wasser in einem gro\u00dfen Topf zum Kochen bringen und reichlich salzen.
