has-theme-palette-2-color has-text-color\">Schritt 1 | <strong>Den s\u00fc\u00dfen Vorteig zubereiten:<\/strong><\/h5>\n\n\n\n<p>In einem Einmachglas das\u00a0Sauerteiganstellgut, das lauwarme Wasser und den Zucker vermischen, bis sich der Sauerteigansatz vollst\u00e4ndig aufgel\u00f6st hat. Dann das Mehl hinzuf\u00fcgen und vollst\u00e4ndig einarbeiten. Der s\u00fc\u00dfe Sauerteig sollte eine feste, teigartige Konsistenz haben. Um sicherzustellen, dass die Zutaten gut miteinander vermischt sind, kann man den Teig auch kurz auf der Arbeitsfl\u00e4che kneten, bis er sich glatt und elastisch anf\u00fchlt. Anschlie\u00dfend wieder ins Glas legen und locker mit einem Deckel abdecken. Den Sauerteig an einem warmen Ort (28 \u00b0C - 30 \u00b0C) etwa 4 Stunden gehen lassen. Er ist aktiv und einsatzbereit, wenn sich sein Volumen mindestens verdoppelt hat und er luftig aussieht. Er sollte ein mildes, leicht s\u00fc\u00dfliches Aroma haben.\u00a0\u2028&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 2 | <strong>Den Hauptteig zubereiten:<\/strong><\/h5>\n\n\n\n<p>Den aktiven Sauerteig, Zucker, Ei und Milch in die Sch\u00fcssel einer K\u00fcchenmaschine geben. Mit dem R\u00fchrbesen bei mittlerer bis hoher Geschwindigkeit so lange r\u00fchren, bis die Zutaten gut miteinander vermengt sind und der Sauerteig sich vollst\u00e4ndig aufgel\u00f6st hat. Dann zum Knethaken wechseln und das Mehl hinzuf\u00fcgen. Bei niedriger Geschwindigkeit f\u00fcr ein paar Minuten r\u00fchren, bis das Mehl vollst\u00e4ndig eingearbeitet ist. Die Sch\u00fcssel mit einem feuchten Geschirrtuch abdecken und den Teig bei Raumtemperatur ca. 30 Minuten ruhen lassen. Dadurch kann das Mehl die Fl\u00fcssigkeiten vollst\u00e4ndig aufnehmen und der Teig wird geschmeidiger. W\u00e4hrend die K\u00fcchenmaschine bei niedriger Geschwindigkeit l\u00e4uft, nach und nach die weichen Butterw\u00fcrfel hinzuf\u00fcgen und kneten, bis ein homogener Teig entsteht. Dann die Geschwindigkeit erh\u00f6hen und den Teig noch weitere 10 - 15 Minuten lang kneten, um gen\u00fcgend Struktur zu entwickeln. Der Teig ist ausreichend geknetet, wenn er sich vollst\u00e4ndig von den Seiten der R\u00fchrsch\u00fcssel l\u00f6st und um den Knethaken schlingt. Nach dem Kneten sollte er eine leicht gl\u00e4nzende Oberfl\u00e4che haben und sich samtig weich anf\u00fchlen.\u00a0\u2028&nbsp;<\/p>\n\n\n\n<h5 class=\"wp-block-heading has-theme-palette-2-color has-text-color\">Schritt 4 | Den Teig gehen lassen: <\/h5>\n\n\n\n<p>Den Teig in eine leicht gefettete Sch\u00fcssel legen, mit Frischhaltefolie abdecken und\u00a0an einem warmen Ort (26 \u00b0C\u201328 \u00b0C) f\u00fcr etwa 4 Stunden gehen lassen.\u00a0 Am Ende der ersten Gare sollte der Teig luftiger aussehen und viele kleine Bl\u00e4schen enthalten, er muss w\u00e4hrend dieser Zeit aber noch nicht auf die doppelte Gr\u00f6\u00dfe aufgehen. In der Zwischenzeit die Mohnf\u00fclle zubereiten: Die Butter in einem kleinen Topf bei mittlerer Hitze schmelzen. Dann Milch, Zucker, Honig, Rum und Zimt hinzuf\u00fcgen und kurz aufkochen lassen. Sobald die Milch kocht, den Mohn einr\u00fchren. Anschlie\u00dfend den Topf vom Herd nehmen und mit einem Deckel abdecken.
