How to make Busiate Pasta 

Follow this simple guide to make homemade Busiate pasta and learn how to transform a simple vegan pasta dough into beautifully twisted pasta strands. Busiate is a unique, spiral-shaped pasta variety from Sicily.

What you'll need 

Busiate pasta is traditionally made form a simple eggless pasta dough. All you need is semolina flour and water. To shape the pasta you'll need a thin rod or a wooden skewer. 

Step 1 

Make the dough and let it rest for at least one hour to relax the gluten. This makes it easier to shape the dough. Then, divide the dough into quarters and only work with small batches at a time . 

Step 2

Roll the dough out to an even thickness and cut it into strips (about 1 - 2 cm wide). 

Step 3

Roll the dough out into long, thin ropes. Then, cut the ropes into shorter pieces (about 7 - 10 cm long) . 

Step 4

Lay a piece of dough vertically in front of you. Place the wooden skewer diagonally to the top of the dough.

Step 5

Wrap the of the dough around the skewer. 

Step 6

Continue rolling until the dough is fully wrapped around the skewer. This creates the typical coil shape. Gently slide the pasta of the skewer. 

Step 7

Lay the pasta out flat in a single layer on a baking tray. Let it air dry for about one hour before cooking. Cook the paste in salted boiling water for about 2 minutes.
