Orecchiette with creamy red pepper sauce is an easy and flavorful vegetarian pasta dish that combines the unique texture of orecchiette with the rich flavor of roasted red peppers.

Cut red bell peppers in half and remove the seeds. Cut an onion into quarters. Put both into a baking dish and drizzle with olive oil.
Roast the peppers and onion in the oven until smooth and slightly charred. Remove the dish from the oven and cover with foil. Let the peppers steam until cool enough to touch. Peel the peppers and discard the skin.
Transfer the peppers and onion to a blender. Add heavy cream, tomato paste, basil leaves, garlic, pine nuts and parmesan cheese. Blend until smooth and creamy. Add salt and pepper to taste. Cook the orecchiette and toss it with the sauce.
Garnish with fresh basil and grated parmesan cheese. Enjoy!
