What is sourdough ciabatta?

Ciabatta is a rustic Italian bread that’s characterized by its rectangular shape, soft crumb and crispy crust. It’s typically made with a high hydration dough which helps to achieve an open crumb structure with large air pockets.

What you'll need

- Active stiff sourdough starter - Strong bread flour with 12- 14 % protein - Water  - Salt  

Method 

1. Mix all ingredients until a shaggy dough forms. Knead until it becomes smoother and more elastic. 2. Let it rise in a warm spot for about 4 hours and perform 6 sets of coil folds to build more dough strength.  3. Divide and shape the dough into rectangular pieces. Proof for about 1 hour and pre-heat the oven.  4. Bake for 20 minutes and let it cool.
