Semolina flour is finely milled hard durum wheat.
It's called "Semola rimacinata di grano duro" in Italy.
Semolina flour is high in gluten and gives pasta a nice texture.
Tip the semolina flour onto your work surface and create a well in the center.
Pour warm water into the well.
Use a fork to mix flour and water.
Use a bench scraper and bring everything together into a shaggy dough.
Knead vigorously for 10 minutes until smooth and elastic.
Let the dough rest for 30 minutes. Then shape your favorite homemade pasta.
