How to Make Gnocchetti Sardi

Gnocchetti Sardi, also known as Malloreddus, is one of the easiest pasta shapes to make at home! This hand-rolled pasta from Sardinia is made with a simple 2-ingredient vegan pasta dough.

What are Gnocchetti Sardi?

Gnocchetti Sardi is a type of semolina pasta from Sardinia. The shape is created by rolling little pieces of dough over a gnocchi board. 

What you'll need

- One batch of semolina pasta dough -Gnocchi board or fork to create the ridged shape

Step 1 

Divide the dough into smaller pieces and roll them out into long strands. Use a bench scraper to cut the strands into little squares. 

Step 2 

Use your thumb to roll the little pieces of dough over a gnocchi board. Alternatively, you can roll them over the back of a fork to create the ridges. 

Step 3 

Cook the malloreddus in salted boiling water for about 2- 3 minutes. Serve with your favorite sauce. Enjoy!
