Gnocchetti Sardi is a type of semolina pasta from Sardinia. The shape is created by rolling little pieces of dough over a gnocchi board.
- One batch of semolina pasta dough -Gnocchi board or fork to create the ridged shape
Divide the dough into smaller pieces and roll them out into long strands. Use a bench scraper to cut the strands into little squares.
Use your thumb to roll the little pieces of dough over a gnocchi board. Alternatively, you can roll them over the back of a fork to create the ridges.
Cook the malloreddus in salted boiling water for about 2- 3 minutes. Serve with your favorite sauce. Enjoy!
