Learn how to make pici pasta from scratch! It’s one of the easiest and most beginner-friendly pasta shapes. No special pasta equipment needed. Pici pasta originates from Tuscany. It’s similar to spaghetti but thicker and more rustic. With just a few basic ingredients and a little bit of time, you can easily create this delicious and chewy pasta shape at home.
For 2 people: - 200 g flour - 100 g warm water - 10 g olive oil - a bench scraper to help bring the dough together - a rolling pin to roll out the dough
1.) Mix the ingredients until a shaggy dough forms. Knead it for 10 minutes until it becomes smooth and elastic. Let it rest for at least 30 minutes. 2.) Cut off a quarter of the dough. Roll it out to an even thickness and cut it into thin strips. 3.) Roll each strip into a long spaghetti-like strand. Store the pasta on a semolina dusted baking tray. Repeat with the remaining dough. 4.) Cook the pici in salted boiling water for 2 - 3 minutes. Drain and toss with your favorite sauce.
