Learn how to make pappardelle pasta from scratch. Pappardelle are wide pasta ribbons from Tuscany made with fresh egg pasta dough.
Let’s get started!
Cut off one quarter of the pasta dough and roll it out into a thin sheet. Cut the sheet into smaller rectangles (20 cm length).
Lightly dust the pasta sheets with semolina flour and cut them into 2 - 3 cm wide ribbons.
Stack the ribbons on top of each other and twirl them into pasta nests. Repeat with the remaining dough.
