Create a flour well on your work surface. Crack the eggs into a small bowl, add the squid ink and mix well until fully combined.
Pour the egg mixture into the flour well and use a fork to mix the flour and eggs until a shaggy dough forms.
Bring everything together with your hands and knead for 10 minutes until smooth and elastic.
Wrap the dough in plastic wrap and let it rest for 30 minutes. Then roll it out into thin pasta sheets. Cut the sheets into ribbons to make tagliatelle.
