Pre-heat a non-stick pan over medium heat.
In a wide, shallow bowl, whisk together the eggs, milk, sugar, vanilla extract, and ground cinnamon.

Add one tablespoon of butter to the pan and let it melt. Meanwhile, dip two slices of bread into the egg mixture, let it soak for a few seconds, flip it over and make sure that both sides are well covered with the mixture.

Place the slices in the pan and cook until golden brown over medium heat, about 2 -3 minutes on each side. Repeat with the remaining slices.
